- frozen honey mushrooms - before freezing they need to be peeled, washed, and you can boil them a little. Frozen mushrooms do not need to be thawed first;
- cream - fat content does not matter. To prevent them from curdling when adding to the soup, preheat them;
- cheese - processed or other soft, so that it dissolves better;
- chicken - the soup will be tastier if you add boiled poultry or broth to it;
- smoked bacon - you may like the smoky taste combined with mushrooms;
- potatoes - starchy varieties will add richness to the soup.
Important! Before sending for freezing,
the honey mushrooms so that there are no false honey mushrooms or other poisonous mushrooms among them.
How to prepare “Honey mushroom soup puree”
1. Boil honey mushrooms in salted water. This process will take 20-30 minutes. If you use frozen honey mushrooms, simply defrost them; there is no need to cook them. However, still rinse the mushrooms with running water.
2. Cut the potatoes into small pieces and boil. Don't forget to salt the water. You can add a bay leaf to the pan, it will add flavor to the potatoes.
3. While the potatoes and mushrooms are cooking, finely chop the onion.
4. Then melt the butter in a frying pan and fry the onion until transparent.
5. Add the prepared honey mushrooms to the frying pan with the onions, mix thoroughly and simmer for 20 minutes.
6. When the potatoes are cooked, take them out and put them in a blender. We don’t pour out the water, we will need it later. If you used a bay leaf, you should now remove it.
7. Grind the finished potatoes and mushrooms in a blender.
8. Then pour the resulting mass back into the pan where the potatoes were cooked. Mix thoroughly, bring to a boil, then turn off the stove.
9. Now the finishing touch - add cream (milk will also do), mix again and leave on the stove for a few more minutes.

Mushroom soup made from fresh honey mushrooms with melted cheese
To prepare soup with honey mushrooms and processed cheese, you will need simple ingredients:
- mushrooms - 0.4 kg;
- any ready-made broth or water for broth - 2 l;
- processed cheese - 3-4 pcs;
- potatoes - 4 pcs;
- carrots - 1 piece;
- onions - 1-2 heads;
- any greens;
- spices;
- oil for frying.
The ratio of liquid to the amount of cheese curds depends on how rich and creamy you want the taste of the honey mushroom cheesecake to be.
In the classic version of the recipe, it is recommended to take 1 pc. processed cheese per 1 liter of broth; for a more pronounced taste, take 2 pcs. for 1 liter of water.
For this mushroom dish, you can prepare the main ingredient in several ways. The mushrooms need to be washed, cut into pieces and then either boiled immediately or pre-fryed before cooking for about 5 minutes in a frying pan.
Vegetables that are used to prepare cheese soup with honey mushrooms need to be peeled, rinsed and chopped. To do this, cut the potatoes into cubes, chop the onion, and grate the carrots.
The chopped potatoes should be added to the broth in which the mushrooms are already boiled and cooked for about 15 minutes over medium heat.
At this time, using butter or vegetable oil, fry the onion for several minutes, add carrots to it and keep on the stove until golden brown.
After the onions and carrots are sufficiently fried, they are added to boiling water and cooked in a saucepan for at least 10 minutes.
The grated cheeses should be added to the soup and cooked, stirring constantly, until they are completely dissolved.
While all the ingredients are ready, you need to prepare the cheesecakes. They should be finely chopped or, so that they dissolve faster, grated. To make the melted texture easier to slice, the product can first be placed in the freezer and left there for 20 minutes.
The grated cheeses should be added to the soup and cooked, stirring constantly, until they are completely dissolved.
Take any greens you like: dill, cilantro, parsley. Rinse well, chop and add to the soup along with salt, pepper and other spices at the end of cooking.

- The first step is to take the mushrooms and rinse them thoroughly. They are then soaked in warm water for about half an hour, after which they will need to be strained. However, water that has been drained should never be thrown away.
- The remaining liquid must be diluted with fresh water until the total volume reaches 1.3 liters. Mushrooms pre-cut into small pieces are added to it. Everything cooks for about 40 minutes. This time is enough for the honey mushrooms to become soft enough.
- Next, chopped potatoes and onions are added to the soup. Everything is salted and cooked for about 20 minutes. While it continues to cook, you need to make the dressing. For it, flour is fried in a frying pan together with butter. Then it is slightly diluted with mushroom broth taken from the soup and everything is sent to the pan. When adding the dressing to the soup, be careful not to form lumps.
- The soup is cooked for about a couple more minutes, after which it infuses for some time. You can serve it as is, or you can turn it into a puree soup. If you choose the second option, then you need to add cream, and if you choose the first, a small amount of sour cream and chopped herbs.
Cheese soup with honey mushrooms
Soups with melted cheese have long taken their place in the hearts of many people.
They have a particularly delicate creamy taste, are easy to prepare and do not require special expenses. Even if you don’t have meat or fish at home, you can surprise your loved ones with such an original dish. Honey mushrooms will help make it even tastier and more aromatic. Ingredients:
- Mushrooms - 400 g;
- Potatoes - 500 g;
- Two carrots;
- Two onions;
- Two packages of processed cheese (each 80-100 grams);
- Oil for frying;
- Herbs, salt and spices to taste.
How to cook
Step 1:
Thaw or boil the mushrooms.

Peel and rinse all vegetables and herbs under cold water. Dice the onions and potatoes, chop the carrots on a coarse grater. Chop the greens too.
Step 3:

Step 4:

- 0.5 kg honey mushrooms;
- bulb;
- butter - 1 tbsp. l.;
- flour - 1 tbsp. l. with a slide;
- sour cream - 2 tbsp. l.;
- salt, pepper - to taste;
- 2 liters of water.
Step by step process:
- Defrost honey mushrooms at room temperature, boil for a quarter of an hour in clean water.
- Pour the liquid into a separate bowl; later you will use it to prepare the sour cream dressing and the soup itself.
- Chop the onion in advance and brown it in a frying pan greased with vegetable oil.
- Melt a piece of butter in a deep frying pan.
- Pour flour into it and fry it over low heat until creamy.
- Then add sour cream and stir quickly until you get a ball of flour.
- Using a ladle, pour mushroom broth into the pan. Pour in one ladle and stir thoroughly, another ladle and stir again. Do this until you get a very liquid sour cream and flour dressing.
