Prepare the salad as follows:

  1. Combine mushrooms with 150 ml of oil. Fry everything until golden brown.
  2. Cut the onions into cubes and add to the pan. Fry for another 16 minutes until softened, then add chopped garlic.
  3. Separately, fry the shredded cabbage with the remaining oil. Salt and spices are added 10 minutes before cooking.
  4. Combine the mushrooms and cabbage, then simmer for another 15-20 minutes.
  5. Place the mixture in dry, clean jars, which are then sterilized for 30 minutes.
  6. Seal the jars, turn them over, wrap them in a blanket and leave for 2 days, after which you can put them in the cellar.

With carrots and onions

The vegetable mixture will allow you to store fried mushrooms longer. In addition to honey mushrooms (1 kg), other ingredients are needed:

  • 0.5 kg of onion;
  • 0.5 kg carrots;
  • 250 ml oil (olive or any other vegetable);
  • 3 tsp. salt;
  • peppercorns.

You can prepare mushrooms with carrots and onions using the following technology:

  1. Fry the honey mushrooms first in a dry frying pan, and then with the addition of oil until a beautiful color appears.
  2. Cut the onion into half rings, add to the pan and fry for another 15 minutes.
  3. Peel the carrots, then grate them using a Korean grater. Fry separately with the addition of meat until golden brown.
  4. Now combine the contents of the pans, add pepper and simmer for no more than 20 minutes.
  5. Place the dish into prepared jars. They need to be sterilized for 40 minutes over low heat. Close the jars with nylon lids and, after cooling, lower them into the basement.

With citric acid

This recipe is radically different from other similar ones not only by the use of citric acid instead of vinegar, but also by the method of putting it into jars. Required ingredients:

  • 2 kg of prepared mushrooms;
  • 200 ml oil;
  • 0.5 tsp. citric acid;
  • garlic (7 cloves);
  • chopped greens;
  • salt, peppercorns.

The recipe itself is as follows:

  1. Evaporate excess moisture from the mushrooms, then pour oil into the frying pan and fry the mushrooms over high heat until crusty.
  2. Place them in jars, stirring with herbs and garlic.
  3. Dissolve citric acid in the remaining oil, bring to a boil and add pepper.
  4. Let the mixture cool, only then pour it into the jars with mushrooms.
  5. Close with nylon lids. Store pickled mushrooms in a cool place for the winter.

Primary processing of honey mushrooms

Processing honey mushrooms does not take much time, but is still necessary. Especially if the fruits were collected by a person himself. To reduce cleaning costs, you need to remove fallen leaves and other debris from mushrooms while still in the forest. Since they grow in the forest almost all year round, you have to get rid of damaged mushrooms or specimens eaten by rodents.

  • Will reduce the time for cleaning and proper harvesting. Honey mushrooms are cut off closer to the cap, leaving a small part of the stem on the stump or other surface. Place the harvested fruits in a dense, hard container so that they do not lose their shape.
  • The place where the mushroom is cut tends to darken very quickly, so the treatment should be carried out immediately after returning from the forest. To begin with, the fruiting bodies are sorted by size, then most of the stems are cut off, and the caps are wiped with a damp towel.
  • Before pickling, boiling or frying, honey mushrooms must undergo a soaking procedure in water. It lasts no more than half an hour. This is necessary, since excess bitterness will be removed along with the water, as well as small insects living in the fruit.
  • Then the special “skirt” on the leg, the film, is removed.

Fried honey mushrooms with potatoes at home

This is the easiest and simplest way to prepare a delicious lunch or dinner.

You will need the simplest products, which will make the taste even better. This mushroom dish reminds me of the taste of childhood, this is exactly how my grandmother cooked. It turned out incredibly fragrant. Now, based on my memories, I cook fried mushrooms for my relatives, everyone without exception likes them. But still, grandma’s turned out to be tastier.

Ingredients:

  • honey mushrooms - 250 grams;
  • potatoes - 250 grams;
  • onion - 1 medium size;
  • salt and pepper to taste;
  • vegetable oil.

Cooking steps:

1. Boil the mushrooms for 10 minutes, drain the water. I peel the potatoes and cut them into slices. Pour vegetable oil into a frying pan, heat it up, and fry the onions for a few minutes. Then I add boiled honey mushrooms. I also fry for a couple of minutes.

2. Next, add sliced ​​potatoes to the pan, salt and pepper to taste, and stir. The cooking process will still take about 10 minutes.

The amazing dish is ready, it turns out aromatic, satisfying and nutritious. Fried mushrooms do not have to be cooked only in season; even frozen mushrooms are suitable for this in winter. I know that many men love to eat potatoes in unlimited quantities, and they never get tired of them.
