However, soaking does not eliminate the need to wash each mushroom separately. You need to cut off the edge of the stem and damaged areas, cut large mushrooms into pieces (at the same time you will be able to detect wormy mushrooms).

  1. Pour cold water into a large saucepan, add mushrooms, add salt so that the white ones do not darken - add 3 g of citric acid (per 1 liter of water). Bring to a boil over high heat and cook for 15 minutes (reduce heat). Remove the resulting foam with a slotted spoon.
  2. After 15 minutes, drain the water, drain the mushrooms in a colander and rinse under running water. Return to boil in salted water: bring to a boil and simmer for 15 minutes.

  4. Heat a dry, clean frying pan. Place the mushrooms on it and heat, turning with a spatula, until the moisture from the bottom of the pan evaporates.   • 1 kg of already boiled mushrooms;
  • 7 medium onions;
  • half tbsp. spoons of salt;
  • 6 tbsp. spoons of vegetable oil, it can be replaced with pork lard;
  • teaspoon ground black pepper;
  • a pair of clove buds.

Those who wish can add 2 tbsp. spoons of soy sauce.

The last ingredient will give the dish a special taste.

Cooking process:

Frying honey mushrooms for the winter is possible not only with vegetable oil, but also with butter; ghee is usually used. This recipe successfully combines the sweet-spicy flavor of nutmeg, the delicate aroma of melted butter and the rich taste of honey mushrooms.

Ingredients:

  • already cooked honey mushrooms - 1.5 kg;
  • about a glass of ghee;
  • 3 onions;
  • 5 cloves of garlic;
  • a small pinch of nutmeg;
  • 3 bay leaves.

The amount of salt is chosen according to your own taste.

How to cook:

  1. Place the mushrooms in a dry frying pan and fry until all the liquid has evaporated and the mushrooms themselves have browned. The fire must be strong.
