Today I woke up with a great desire to drink coffee with golden crispy puff pastries with mushrooms and cheese. Of course, I didn’t have time to prepare them for breakfast, since the frozen puff pastry needed time to thaw. But by lunchtime, these wonderful puff pastries became a pleasant bonus. To fill the puff pastries, I chose my favorite combination: champignons, fresh tomatoes and cheese. And, of course, a lot of spices. I made the puff pastries in the form of triangles with cuts on top. The process of making puff pastries with mushrooms, tomatoes and cheese is very simple. Moreover, I accompany all stages with step-by-step photographs. The puff pastries are soft inside, with a crispy crust on top, very tasty. I recommend!

Preparation

1. I leave the puff pastry without yeast on the table in advance to defrost. The optimal temperature for the defrosting process, in this case, is room temperature. Wash tomatoes and mushrooms. I peel the onion.

2. I cut the champignons into medium slices. I just chop the onion finely.

3. Fry the mushrooms and onions in a heated frying pan with the addition of vegetable oil. Fry for about 4-5 minutes until a crispy crust forms on the mushrooms.

4. Cut fresh tomatoes into small cubes. I squeeze them lightly with my hands to remove excess liquid. We don't need it for the filling.

5. I grate the cheese. I use the side with the large teeth of the grater.

6. In a large plate, mix cooled mushrooms with onions, grated cheese and chopped tomatoes. I add spices, mix, and taste. The filling is ready.

7. I had the defrosted puff pastry in the form of two rectangles. I sprinkled each of them with flour to make it easier to work with. Roll out the dough into a square with a rolling pin to a thickness of 3-4 mm.

8. Using a pizza cutter, cut the rolled out rectangle of dough into four squares.

9. I mentally divide each small square diagonally into two triangles. On one triangular part I make five cuts with a pizza cutter. This will be the top part when sculpting the puffs. The filling will look appetizing through these cuts.

10. Place 2 tbsp in the center of the square. fillings. I lift one edge of the square (the one with the cuts) and pull it diagonally over the other edge. The result is a triangle-shaped puff pastry. Using a fork, I secure the two edges of the puff pastry. I press the tines of a fork along the edge so that the dough sticks together. You will get a nice “fence”. More clearly in the photo.

11. Place the formed puff pastries on a baking sheet in random order. I cover the baking tray with baking paper in advance. This helps keep the pan clean.

12. Brush them with whipped yolk on top and sprinkle with sesame seeds.

13. Preheat the oven to 180 degrees. Then I put the baking sheet with puff pastries in the oven. Bake the puff pastries for 30 minutes until golden brown.

14. The finished puff pastries are easily removed from the baking sheet (nothing sticks to the parchment). I let them cool a little and serve. Bon appetit!

Well, and most importantly – it turns out very, very tasty! It's quite difficult to ruin a pie: essentially, you just need to prepare the filling, and the oven will do everything for you. You just need to wait the allotted time for the dough to bake, and then cut and enjoy a delicious puff pastry pie with cheese and mushrooms.

Ingredients:

  • 200 g puff pastry;
  • 50 grams of hard cheese;
  • 20 grams of champignons;
  • 1 small onion;
  • salt, black pepper;
  • vegetable oil;
  • 1 yolk;
  • 1-2 tsp. sesame seeds.

How to make puff pastry pie with cheese and mushrooms:

You can make the pie dough yourself, but it is quite a hassle. I usually make a cheese pie from puff pastry without yeast, which I buy at the store.

Puff pastry is usually sold in layers - sometimes one, sometimes several: long and narrow. This time I bought the dough in the form of several layers and took 2 pieces for the pie (their size is approximately (12-13 cm by 25 cm). If you have one sheet of puff pastry, then, looking ahead, I will say that it will be even easier for you prepare the pie: place the filling on one part of the layer, and simply cover the other: in this case, you will have 1 less seam.But let's talk about everything in order.

Three hard cheeses on a coarse or medium grater.

Cut the onion into half rings, mushrooms into thin slices. Fry the onion half rings over low heat in a small amount of vegetable oil until the onion half rings are transparent, then add the mushroom plates to them, mix and cook everything together over medium or low heat for 5-7 minutes, stirring occasionally. Salt and pepper to taste.

Place the first layer of puff pastry on greased baking paper. Place mushrooms and onions on puff pastry. If you have one large layer, then, as I already mentioned, put the filling on one half of it.

Place grated cheese on top of the mushrooms.

Now we cover the first plate of dough with the second one, pinch the edges and fold them down, under the pie. If you have one large layer, then this process is somewhat easier for you - one side does not need to be pinched and folded.

Beat the yolk and brush the surface of the pie with a pastry brush.

Then use a knife to make cuts on the surface of the pie - at a distance of about 2-3 cm from each other and retreating slightly from the edge of the pie.

Sprinkle the pie with sesame seeds. And put it in the oven, preheated to 220 degrees.

In just 25-30 minutes the pie will be ready: the dough will rise, brown and become very appetizing.

Carefully remove the cake from the baking paper and place it on a plate or wooden board.

You can wait until the pie with puff pastry and cheese and mushrooms cools down, or you can immediately cut it into portions and serve.

There, of course, there is dough, but it is an insignificant layer that simply serves as the so-called foundation. To make upside-down pie with mushrooms, you will need:

  • 200 ml. kefir;
  • 2 eggs;
  • 300 grams of flour;
  • 1 teaspoon each of soda and salt;
  • 250 grams of canned champignon mushrooms;
  • 250 grams of cheese;
  • 200 grams of rice;
  • 200 grams of minced meat;
  • 200 grams of asparagus or green beans;
  • 2 onions.

First you need to prepare the filling. Fry minced meat (it is better to take low-fat varieties) in a frying pan with onions. Boil the rice in salted water until tender. Separately make the dough, or rather the filling for the pie. Beat eggs with salt, pour in kefir and soda slaked with vinegar. After the characteristic bubbles appear, knead the dough with the addition of flour. It should turn out liquid like pancakes.

You can form a layer cake with mushrooms. Be sure to line the pan with parchment paper or foil. The first layer will be mushrooms, then grated cheese. Then ready-boiled rice is laid out, followed by minced meat fried with onions. The last layer of this pyramid will be beans or asparagus; if necessary, it must first be thawed and lightly fried.

Carefully pour all this over the prepared dough and place in the oven for 45 minutes. Bake at 180 degrees. Then let it cool and only then turn the container over onto a plate. This way, the dough will be on the bottom, and on top there will be mushrooms drowned in viscous cheese.

The following products are required for the dish:

  • 0.5 kg yeast puff pastry;
  • 400 g canned champignons;
  • onion;
  • egg;
  • 3 potatoes;
  • refined oil.

First, defrost the dough at room temperature. At this time, prepare the minced meat.

Finely chop the onion and champignons. Fry in oil. Pecheritsa can be taken either fresh or pickled. Boil the potatoes and mash them. Then combine all the ingredients together and mix well.

Now the puff pastry needs to be cut into equal parts, sprinkled with a little flour, and rolled out. Place the prepared filling in the center. Pinch the edges of the dough diagonally so that they do not come apart during baking.
