There are 2 main approaches to frying honey mushrooms: with and without preliminary boiling.

Well, if you have collected very few young mushrooms, then you can do without boiling. To boil honey mushrooms before frying, rinse the sorted mushrooms and fill them with water so that it completely covers the honey mushrooms. Then add salt to the water and bring the mushrooms to a boil. From the moment of boiling, cook the honey mushrooms for 20-40 minutes, depending on the age of the mushrooms: the younger and smaller the mushrooms, the less time is enough to boil them. Skim off any foam that forms regularly during cooking.

Place the boiled honey mushrooms in a colander, rinse with running water, then let the water drain. Set the part of the mushrooms that are intended for frying aside, and you can leave the rest of the mushrooms in the refrigerator when they have cooled. Just remember that boiled mushrooms can be stored in the refrigerator for no more than 2 days, so try to use them earlier. Place honey mushrooms in heated oil and fry, stirring regularly, for 10-15 minutes. When there are about 5 minutes left of frying, salt and pepper the mushrooms to taste.
