  • Carpathian region , represented by massifs between rivers on the border of such regions as Lviv and Ivano-Frankivsk. On the territory of the Skole Beskids nature reserve, consisting of beech conifers, more than five dozen species of edible mushrooms grow, including porcini and boletus, russula, boletus and honey mushrooms. The best places for collecting mushrooms are the surrounding areas near the villages of Oriv, Tukhlya, Oryavchik and Grebennoye. The average distance from Lviv is just over one hundred kilometers;
  • Carpathian highlands , represented by elevated areas of mountainous and wooded terrain.   • Bukovyna in the Chernivtsi region , represented by vast beech forests, is a real paradise for experienced mushroom pickers and simple amateurs. It is here that the highest yield of very large porcini mushrooms is recorded annually. Among the settlements included in numerous modern ecotourism trails are the villages of Sergii and Zelenaya, as well as Vizhenka. Organized ecotourism is based on a “silent hunt” accompanied by an experienced guide who is able to show the best mushroom spots;
  • The Lviv region is rich in boletuses, boletuses, honey mushrooms and porcini mushrooms, which grow in abundance in the wooded mountainous areas in the Starosambir, Turkiv and Skole districts near the villages of Skhidnytsia, Slavskoe and Likhobora;
  • Ternopil region , including the Monastyrsky and Shumsky districts, is characterized by active fruiting of porcini mushrooms and honey mushrooms, and boletus and boletus mushrooms grow in the Mshanetsky forests, as well as boletus. It is recommended to go to the Kremenets Mountains to collect boletus mushrooms;
  • Cherkasy region , where a large number of large forests are concentrated, is famous for porcini mushrooms and butter mushrooms. Close to Kanev there is the famous Buchatsky forestry, which has become very popular due to the annual and very abundant fruiting of honey mushrooms.

It is also worth noting the abundance of mushrooms in forests located near the regional center of Kelmentsi, in the vicinity of Lake Synevyr and near the villages of Lumshory, Dragovo and Vyshka, as well as Kolochava. Mushroom abundance is observed in remote villages of Svalyavsky and Mukachevo regions.

Tips for those who are going to the forest

• Clothes and shoes should be comfortable and cover the entire body - this will help protect against tick bites, the coolness of the forest and scratching branches.

• Don't forget to take mosquito repellent, otherwise they might suck blood from you.

• Bring drinking water with you. Inexperienced mushroom pickers are sure that there are many springs in the forest from which they can drink. In fact, it can take half a day to find potable water.

• To avoid getting lost, bring a GPS navigator or compass and map, as well as a whistle.

• Be prepared to encounter snakes. Having noticed the “creeping reptile”, it is better to freeze in place. Then, without turning your back to him, move away very slowly. If the snake doesn't think you want to attack it, it won't chase you.

• Do not be happy to meet the furry and hoofed inhabitants of the forest. If you see small animals, do not try to pet them, but slowly move away to a safe distance. After all, somewhere next to the cute kids there is definitely their stern mother, who is ready to attack everyone for her children. What edible mushrooms grow in Ukraine in May

Edible mushrooms are eaten without risk to life and health, even without subjecting the fruiting bodies to preliminary strong heat treatment. As a rule, such species have a very high gastronomic value and are extremely popular among mushroom pickers.

Appears in forest areas on St. George's Day. The taste of the fruiting bodies of this type of spring mushroom resembles the pulp of the common morel. In some countries, this variety is considered a delicacy and is widely used in the preparation of various mushroom dishes, but in our country it is collected exclusively by amateurs.

It is most often found in aspen forests, as well as in damp places in lowlands where there is no high grass stand. Prefers areas covered with last year's leaf litter. The main fruiting season of the morel cap occurs in early or mid-April, and the duration of harvesting the fruiting bodies does not exceed two weeks.

One of the edible and quite popular varieties among many mushroom pickers, which is eaten only when young. Old and overgrown fruiting bodies become very tough. For several seasons, the scaly tinder fungus bears fruit on the stumps of trees such as linden and maple. It can also destroy other species of deciduous trees.

Oyster mushroom

The cap is shell-, ear-shaped or tongue-shaped . The surface is most often broadly funnel-shaped, smooth, dark in color, grayish-brown, black-brown with a slight bluish tint. The leg is cylindrical, with hairy pubescence, white or brownish in color. The pulp is white, soft or slightly harsh, without a pronounced mushroom aroma or taste.

Oyster mushroom covered

It grows in large groups in May, on dead wood and fallen aspens. The cap is sessile, kidney-shaped or fan-shaped, with folded or downturned edges. The base is convex, smooth, bare, slightly sticky. The cap is brownish-gray or leathery-brown in color, with radial stripes. The plates are relatively frequent, wide, radial-fan-shaped with uneven edges, yellowish in color, covered with a light membranous blanket. The pulp is fleshy, of sufficient density, whitish in color with the aroma of raw potatoes.

Summer and autumn views of Donbass

Summer in the southern Donbass is usually hot and dry, so it is not at all surprising that for some time the mycelium reduces its fruiting, or even reduces it to zero. A long absence of rain often leads to the fact that even those few mushrooms that are still found in local forests and plantings are affected by numerous parasites, forced to look for saving moisture in their raw pulp.

If you are lucky and the summer season turns out to be rainy and cool, then you will be able to go to the forest to pick mushrooms all months. And in the fall you can actually see real abundance here, the harvests are so large that even inexperienced mushroom pickers leave the forest with full baskets.

Morels

The assortment of mushrooms is also pleasing, because the same morels, which grow not only in the spring, but also in later periods, are considered a real delicacy when properly prepared. It is noteworthy that the snow-white leg of this bizarre fruit with its elongated brown cap resembling a brain, often reaching 15 cm, goes deep into the ground, becoming very porous and fragile over time. And you can find this excellent product for soup or pasta in mixed forests with predominant coniferous species.

Butter

The main feature of the oiler is its slippery brown or slightly reddish cap, covered with thick, unpleasant mucus, which is difficult to remove even after thorough cleaning, salting and pickling of the fruit. In its lower part, the fungus, as befits all flywheels, is covered with a yellow sponge when young and greenish when mature. Usually, various pickles are prepared from butter, since during the frying process they tend to spread in the pan.

Chanterelles

The favorite habitat for these cute orange mushrooms with a funnel-shaped cap is acidic soil, where they can form small settlements. The undoubted advantage of chanterelles is their organoleptic properties and the absence of parasites, while among the disadvantages of the variety it is worth highlighting its low nutritional value.

Honey mushrooms

Unlike spring mushrooms, these babies lack a protective ring in the middle part of their legs, having a more reddish color of their smooth convex cap. In all other respects, this variety is not much different from its earlier counterparts, being an excellent raw material for preparing marinades. Sometimes mushroom pickers manage to collect a whole bucket of honey mushrooms from just one stump, they grow so densely. The main thing is just not to make a mistake and not pick their inedible doubles, the consumption of which is fraught with severe food poisoning.

White

Porcini mushrooms deserve special attention, especially since this delicious variety is widespread in the Donbass, found in its forests. These Boletaceae, with their huge brown velvety brown cap and barrel-like creamy leg, are so good that they are not only fried or added to rich stews, but also dried, frozen and salted for future use, using whole young fruits or adult specimens cut into longitudinal plates .

An important feature of this variety is that its light flesh does not darken when cut, unlike many other varieties of the family, which is where its name comes from.

Milk mushrooms

Pickles and pies with milk mushrooms are the most popular dishes in Slavic cuisine, which is why these unsightly mushrooms, whose shaggy white cap with hard fibers are often hidden under dead wood, forming funny tubercles, are very popular. Another unique feature of this funnel-shaped fungus is its delicate fruity aroma, completely unusual for representatives of this kingdom.

Saffron milk caps

The closest relatives of milk mushrooms are saffron milk caps, which, although they do not have the same smell and color, have a similar shape and taste. The distinctive feature of the variety is its uniform brick color, concave cap and small convexity in its middle part. They are good mainly when salted.

Not all mushrooms growing in natural conditions are edible, so it is very important before you go on a “quiet hunt” to read the description of the most common poisonous or simply inedible varieties.

Entoloma spring

The poisonous species has a small cap with a characteristic bulge in the central part. The color of the fruiting bodies can vary from brownish to almost black. The leg is hollow and brittle.

Ordinary stitch

The species containing toxic components is distinguished by a rather large fruiting body of irregular shape. The cap is spherical in shape, with numerous convolutions. The leg is folded, brittle, grayish in color.

Morel cap

This species is characterized by low quality and belongs to the category of inedible mushrooms. The fruiting body is characterized by a wide cap that grows to the stem, wrinkled type, and beige in color. The pulp is thin, without a characteristic mushroom aroma.
