Selecting additional ingredients

As you know, cutlets, in addition to minced meat, have one more important ingredient. What it will be depends on the preferences of the hostess:

  • semolina: if you decide to thicken the minced meat using this product, this is the right decision that will make it homogeneous and tender;
  • oatmeal: oatmeal cutlets with mushrooms also turn out tender and very soft after frying, the main thing is to grind the cereal into powder in advance, and then you can hope for a positive result (cutlets made from oatmeal with mushrooms are considered a dietary dish, since the cutlets are lean);
  • rice: rice cutlets with mushrooms or zrazy, prepared without adding minced meat: in this recipe, the basis is rice, inside of which you should put oyster mushrooms (cutlets made from rice and mushrooms are considered very satisfying and healthy, especially if you cook them with herbs and without adding oil) ;
  • pearl barley: barley cutlets with the addition of mushrooms can also be called a dietary recipe, since they are cooked mainly by steaming (the cereal must first be chopped).

Meat zrazy with potato filling in the oven

I can’t resist including this recipe, even though it has other fillings. But at the same time, it is so delicious that I still want to share it with you. Although you can also add a boiled egg here. I described a more simplified version, with water. But you can also make a full-fledged sauce: mix tomato paste plus sour cream or mayonnaise, and also add some spices. Pour in water and stir.

Ingredients:

  • Minced chicken – 1 kg
  • Bell pepper - 1 pc.
  • Tomato - 1-3 pcs.
  • Boiled potatoes - 1-3 pcs.
  • Onion - 1 pc.
  • Parsley and dill - a bunch
  • Salt, pepper and seasonings (for chicken, khmeli-suneli) - to taste
  • Garlic - 3 cloves
  • Water - 1.5 cups

Preparation:

1. Finely chop the onion and garlic, or grind in a blender. Finely chop the greens. Add all this to the minced meat. Put salt, pepper and seasonings there. Mix well and beat (lift the minced meat over a bowl or table and throw it back with force) 10-15 times.

2. For the filling, cut boiled potatoes and tomatoes into slices. Peel the bell pepper from seeds and cut into medium pieces.

3. Now take a portion of minced meat, form a ball and make a depression in the middle. Place a piece of pepper there, then a piece of potato and a slice of tomato. Fill the top and align it into an oval shape. Place the preparations on a baking sheet. Pour about 1.5 cups of water into the pan to cover 1/3 of the sheet.

4. Preheat the oven to 180 degrees and place a baking sheet there. Bake for 30-40 minutes. At the same time, make sure that the water does not evaporate completely. And then put it in a dish and serve. The aroma will be simply amazing. And the taste of the zrazy is such that you can swallow your tongue.

Chopped cutlets with mushrooms and chicken

Previously, before the invention of the meat grinder, meat for cutlets was carefully chopped into small pieces using a knife. These pieces lost less juice, which is why the dish turned out more juicy. Today the method has not changed:

  1. Cut the chicken fillet, champignons and onions separately on a wooden board into very small cubes.
  2. Mix all the ingredients, beat in the egg, salt and pepper. It is very good to add chopped parsley, which will give the cutlets additional juiciness.
  3. Form small pieces of minced meat, roll them in breadcrumbs and fry in a greased frying pan on both sides until golden brown.

The structure of the chopped cutlets will be a little unusual, but the taste will be wonderful.

Beneficial features

Mushrooms have a unique composition, excellent taste and a number of beneficial properties. But at the same time, there are still discussions about its harm.

Due to the fact that mushrooms contain a huge number of microelements, they can be compared to fruits, and in terms of the amount of carbohydrates they can be compared to vegetables. This product is also rich in proteins, the amount of which is close to meat.

Another positive property of mushrooms is the presence of 18 amino acids. By the way, there are 20 of them in total. As you know, they act as a building material for the body.

Mushrooms are rich in vitamins B, A, E. This is practically the only product of non-animal origin that contains vitamin D, which is especially important in winter, when residents of the regions do not have the opportunity to soak up the sun.

Mushrooms are rich in microelements important for the functioning of the body, such as potassium, calcium, phosphorus, manganese, zinc, and copper.

Antioxidants contained in mushrooms have an antitumor effect.

From the most tender minced chicken you can easily and quickly prepare cutlets with mushroom filling. Apart from salt and ground pepper, you don’t need to add anything else to this minced meat.

For the filling, cut the onion into thin half rings and brown in a frying pan with vegetable oil. Add mushrooms cut into small pieces and simmer over medium heat until the juice evaporates. Cool the filling and add grated hard cheese into it. In terms of volume, the proportions of mushrooms and cheese should be approximately 1:1.

For breading, prepare 3 bowls:

  1. With wheat flour.
  2. With a beaten raw egg.
  3. With shavings of raw potatoes grated on a coarse grater.

Form the minced meat into a flat cake in the palm of your hand and place about a tablespoon of filling in the middle. Pinch the edges and shape into a slightly flattened cutlet, alternately dredge in flour, dip in egg and coat with potato chips.

Place in a frying pan with boiling vegetable oil and fry on both sides until beautifully golden brown. Place the finished cutlets on a baking sheet and keep for another 15 minutes in a hot oven at a temperature of 180-200° - the juicy cutlets are ready.

Side dish options

Mushroom cutlets are a universal food that can be combined with many side dishes. It could be:

  • boiled or baked potatoes cooked in the oven;
  • rice;
  • pasta;
  • oatmeal;
  • pearl barley;
  • vegetable stew;
  • buckwheat.

In each case, the side dish will perfectly complement cutlets stuffed with mushrooms and other ingredients, as well as make the food satisfying and healthy. However, these recipes work best with grains, especially when topped with gravy or sauce.

Juicy minced meat cutlets filled with mushroom filling can also be served on their own as a snack. In this case, the dish can be placed on the table both hot and cold.

How to cook cutlets with dried mushrooms

This dish is perfect for a Lenten table, since it does not include not only meat, but even eggs. The cohesion of the ingredients occurs due to the addition of viscous rice porridge, and for this purpose it is best to take short-grain rice. The water in which the cereal will be boiled can be slightly salted.

  1. Pre-soak dried mushrooms overnight in cold water.
  2. The next morning, pass them through a meat grinder or grind them using an immersion blender.
  3. Add salt, mix with chopped garlic, ground pepper and chopped herbs.
  4. Then add cooled rice to the mushrooms in a 1:1 ratio and mix the minced meat thoroughly again.
  5. Then, with your hands dipped in water, form small patties.
  6. Roll them in breadcrumbs or regular wheat flour and fry in hot oil in a frying pan.

Possible harm

Despite all the benefits of a product so beloved by many, you should also be careful about their harmful qualities.

The high content of chitin slows down digestion, which makes it difficult to digest mushrooms and the food that was eaten with them. Therefore, mushroom dishes are considered heavy food and it is not recommended to eat them often and in large quantities. But there is a way out - exclude mushroom stems from your diet, because they contain the highest chitin content.

How to properly and tasty cook dried mushrooms

In addition, mushrooms, like a sponge, absorb poisons and harmful substances from the external environment. Therefore, you should carefully choose places to collect this crop.

There are also many poisonous species that can easily be confused with edible ones. It is especially difficult for beginner mushroom pickers, because inedible specimens are skillfully disguised as normal ones.

An improperly preserved crop can become a real deadly poison if it contains a botulinus bacterium. Infection with botulism is life-threatening, but it can be avoided by following simple rules.

Mushroom picking should only be done in environmentally friendly places, preferably with experienced mushroom pickers. If you are not completely sure that the mushroom you find is edible, then it is better not to take it. It is better to eat only mushroom caps, of course, in reasonable quantities.
