How to make a nutritious salad with fried oyster mushrooms and sweet corn:
- Cut pre-washed and well-dried oyster mushrooms into large pieces - the highlight of the salad is in the large pieces of fried mushrooms.
- Heat a frying pan without oil well, then add pieces of mushrooms to it. Cook the oyster mushrooms over medium heat until all the liquid has evaporated. As soon as this happens, pour a little vegetable oil into the pan. Fry the mushrooms over high heat until lightly browned. Add salt and pepper, remove from heat and let cool.
- Rinse fresh cucumbers and wipe dry. Remove the tails and then cut into thin semicircles. If the fruits are very wide, you can chop the cucumbers into quarters.
- Wash fresh parsley or green onions and chop finely.
- Place the canned corn in a sieve and leave for 1-2 minutes to drain all the liquid.
- Place cooled mushrooms, cucumbers, herbs and corn in a deep bowl. Add French mustard and mix well. Taste and, if necessary, add salt and pepper.
- Salad with oyster mushrooms, fried until lightly browned, and sweet corn, all that remains is to season it with sauce. This could be mayonnaise or natural yogurt.

How to make puff salad:
- Salad with oyster mushrooms fried in vegetable oil can be prepared from any part of the chicken. With smoked red meat the dish will be more juicy and tender, and with breast it will be less nutritious. If necessary, separate the meat from the bones, remove the skin, and then cut into small cubes. Place in a bowl.
- Peel the onion, rinse, chop into small squares.
- Wash the oyster mushrooms thoroughly, dry them with a paper towel or place them on a well-absorbent cloth so that all moisture is removed from the mushrooms. Chop into small pieces of arbitrary shape.
- Pour a little odorless vegetable oil (literally 2 tablespoons) into the frying pan and let it warm up. Add finely chopped onion to hot fat. Fry over medium heat, stirring occasionally, until lightly browned.
- Remove half the fried onion from the pan and place in a bowl with shredded smoked chicken.
- Add oyster mushroom pieces to the frying pan with the remaining half of the onion. Literally in 1-2 minutes. the mushrooms will release moisture. Fry the product until the liquid from the pan has completely evaporated. When this happens, add ground pepper and salt to taste and stir. Transfer the oyster mushrooms to a plate and leave to cool completely.
- When the mushrooms have cooled to room temperature, you can begin assembling the puff salad. This can be done using a special culinary or regular split ring, which is used for baking. Place the mold on a flat dish and fill it with the prepared ingredients, compacting each layer well.
- Add a little mayonnaise (about 1 tbsp) to the mixture of meat and fried onions and stir. Place the mixture into the ring and distribute evenly around the entire perimeter.
- Season the cooled oyster mushrooms with another 1 tbsp. l. mayonnaise. Place the mushrooms as a 2nd layer, leveling it with a spoon or spatula.
- Korean carrots for salad can be spicy or regular. Drain the liquid from it, if necessary (if the carrots are too juicy), squeeze additionally with your hands. Form a third layer of the ingredient, placing it on top of the oyster mushrooms and distributing it evenly. There is no need to compact it, as this is the top of the snack, and it will look more impressive in its natural form.
- Salad with oyster mushrooms and smoked chicken can be served immediately, but it is better to let it sit in the refrigerator for at least 1 hour. In this case, the fried mushrooms, meat and carrots will be saturated with each other’s juice, and the appetizer will be as rich as possible.
What can I add?
You can diversify the taste of the salad with additional ingredients or replace some of them:
- Korean carrots can be replaced with boiled or fried ones. In the first case, it is boiled in the peel and then crushed on a coarse grater.
- In the second, they are peeled, grated, again on a large grater, and fried until light golden in a small amount of oil. Afterwards, the fried carrots must be placed on a plate lined with napkins and left to cool completely. During this time, excess fat will disappear from it.
- Instead of smoked chicken, you can take boiled, baked or fried meat. It is worth remembering that such castling will make the taste of the dish completely different.
- Fried onions can easily be replaced with pickled onions. In this case, it should not be mixed with chicken and mushrooms, but should be formed into a separate layer, placed immediately after the meat.
- Mayonnaise does not necessarily serve as a dressing. It can be easily replaced with sour cream or natural yogurt, to which you can add a few cloves of garlic for piquancy.
- For more nutrition, you can add boiled eggs, potatoes or cheese to the salad. Any of these ingredients must be grated on a coarse grater and placed as the 2nd layer (on chicken meat).
- You don't have to use chicken to make a salad with a nice smoky flavor. Pork belly or smoked ham also goes wonderfully with fried oyster mushrooms and carrots.
Serving rules, decoration
The salad is served on the plate where it was collected, after removing the split ring. As a decoration, you can use fresh herbs, as well as several oyster mushrooms, fried whole.

- Spinach - 100 g
- Bell pepper – 300 g

Preparation:

How to make a salad with two types of cheese and fried mushrooms:
- Cut the washed and dried oyster mushrooms into large strips. Place in a heated frying pan with vegetable oil. As soon as all the liquid has evaporated, add salt, pepper, stir and remove from heat. There is no need to fry the mushrooms.
- Peel boiled (hard-boiled) eggs, rinse under water, cut into strips.
- Grind hard and processed cheese on a coarse grater. To make this easier, the processed cheese should be placed in the freezer for 10-15 minutes, then it will be grated well and practically will not remain on the walls of the grater.
- Peel the onion and cut into small cubes. If you don’t like the bitterness of the vegetable, then the crushed ingredient can be scalded with boiling water.
- In a convenient bowl, combine the cooled mushrooms, both types of cheese, eggs, and onions. Season the ingredients to taste with salt and pepper, add mayonnaise, stir.
Let the salad sit for 20-30 minutes, then garnish with parsley and serve.

- For our hearty salad, we first of all hard boil two chicken eggs.
- Let's take care of the chicken fillet: wash it, remove unnecessary films, and then cut the fillet into cubes.
- Fry the chicken fillet in a frying pan, first adding a little vegetable oil to it.
During the frying process, the fillet will need to be salted and peppered to taste.
- Place the finished chicken fillet on a plate to cool. Although you can prepare a warm salad, then there will be no need to cool the ingredients.
- Now it's the turn of the oyster mushrooms. We thoroughly wash them to remove dirt and then cut them into small pieces (see photo).
- We send the mushrooms to fry in a dry frying pan. Add sunflower oil to them towards the end of frying, when the liquid released from the oyster mushrooms has evaporated.
- Finely chop the onion.
- We put the onions we chopped earlier into the frying pan with the mushrooms.
