Tartlets with goat cheese and mushrooms

Ingredients:

  • Tartlets – 18 pcs.
  • Olive oil – 30 ml.
  • Champignons – 500 gr.
  • Cloves – 2 pcs.

  • Chanterelles – 300 gr.
  • Sour cream – 200 gr.
  • Chicken eggs – 4 pcs.
  • Garlic – 2 teaspoons
  • Fresh rosemary – 2 teaspoons
  • Cheddar – 150 gr.
  • Parmesan – 30 gr.
  • Freshly ground white pepper - to taste
  • Salt is optional.

Preparation:

The garlic is chopped.

Cheddar is grated.

Cut the leek into rings and bring to transparency with ½ melted butter over low heat, add the garlic and cook for another minute.

In another frying pan, melt the remaining butter and fry the mushrooms until they release their moisture.

The released mushroom moisture is removed, leaving only a couple of spoons, and brought to softness.

In a tall glass, beat sour cream, garlic, rosemary, eggs, seasoning with pepper.

Place grated cheese on the bottom of the tartlets, mushrooms on top, leeks on top, add sour cream whipped with eggs, sprinkle with grated Parmesan and bake for 10 minutes. in the oven at 180°C.

Compound:

  • margarine – 0.2 kg;
  • milk – 100 ml;
  • wheat flour – 0.45 kg;
  • chicken egg – 2 pcs.;
  • sugar – 5-10 g;
  • salt - a large pinch.

Cooking method:

  • Chop the margarine into small pieces and place in a blender bowl.
  • Break the eggs, separating the yolks from the whites. In this case, whites are not required; add the yolks to the margarine.
  • Pour milk into the yolks and margarine, add sugar and salt.
  • Turn on the blender and turn the contents of its bowl into a homogeneous mass.
  • Transfer the mixture to a bowl.
  • Sift the flour. Add it to the liquid mixture in parts and stir. You can stir with a spatula or a mixer with special attachments for dough. You can knead with your hands only at the final stage, trying to minimize contact of the dough with warm palms.
  • Roll the finished dough into a ball, place it in a plastic bag and put it in the refrigerator for at least 1 hour.
  • Roll out the dough and cut circles out of it using a glass or other container. Place the layers of dough into muffin cups, line the bottom and edges of the cups, and cut off any excess dough. Place the beans in the center so that the bottom of the baskets does not rise during baking.
  • Preheat the oven to 220 degrees, place the molds with dough in it, bake the baskets for 10-15 minutes.
