1. To cook a turkey roast, it's best to first prepare all the necessary ingredients. The turkey should be washed under running water and dried with paper towels, then cut into small cubes.
Advice! To prepare turkey roast, you can use any part of the bird - breast or legs, but of course, the meat must first be completely freed from tendons and bones. Breast fillet contains less fat and is therefore well suited for dietary nutrition, but for the same reason it may seem dry, while turkey legs are higher in calories, but the meat removed from them always turns out juicy, and in addition, it is a source of the most valuable microelement - iron.
2. Peel the potatoes and cut into medium-sized cubes.
3. Clean the champignons from dirt and cut into slices. Instead of champignons, you can use oyster mushrooms or even wild mushrooms, but keep in mind that most wild mushrooms need to be boiled before using.
4. Peel the onion and cut into thin quarter rings.

Place the chopped potatoes in a frying pan with heated vegetable oil, fry over medium heat for about 15 minutes, stirring occasionally so that they brown evenly on all sides, and add salt at the end of cooking. With this preparation, the inside of the potato will remain raw, but the crust formed on its surface will help maintain its shape and elastic consistency during subsequent long-term stewing.

7. In the same frying pan where the potatoes were fried, now you need to fry the onions. Cook over medium heat, stirring occasionally, until soft and lightly browned, about 10 minutes. If the potatoes have absorbed almost all the oil, then you should add a couple more spoons to the pan, otherwise the onions will dry out and may burn.
8. Then put the meat in the frying pan and fry everything together for another 5 minutes, stirring constantly, until you see that the turkey pieces have turned white on all sides.
9. Add the prepared mushrooms to the turkey and onions and simmer the dish over medium heat for 10 - 12 minutes until most of the liquid has evaporated.
