Honey mushrooms, false and edible: how to distinguish by smell, color and appearance

Why do honey mushrooms darken when cooked?

Indeed, ignorant mushroom pickers are often afraid to stock mushrooms , which begin to darken both after they are cut and during heat treatment.

But here it is worth remembering that many mushrooms simply begin to oxidize and, when interacting with oxygen, begin to darken.

There are quite a large number of varieties of such mushrooms that darken, these are boletus, boletus, flywheel, Polish mushroom, many russula, etc. Honey mushrooms have not escaped this fate - they are also susceptible to oxidation and, therefore, begin to darken.

The main thing is to control the collection of real honey mushrooms when preparing honey mushrooms, and you shouldn’t worry about their further “darkening” - this does not affect the taste.

But here it is worth remembering that many mushrooms simply begin to oxidize and, when interacting with oxygen, begin to darken.

The difference between false mushrooms

They belong to the genus Hypholomas and the family Strophariaceae . Some species are in the group of conditionally edible mushrooms. However, the safety of eating such representatives has not been proven.

Edible honey fungus is extremely popular because of its taste. Mushroom pickers collect them from summer until late autumn. They grow in large groups, which makes them easier to find. Edible honey fungus is marinated with spices, salted and consumed raw. However, the poisonous variety causes dangerous poisoning. How to check whether mushrooms are poisonous or not? To distinguish one from the other, you need to know some important features.

  • They have different smells and tastes. Edible honey mushrooms have a pronounced aroma, slightly pungent, but pleasant. False foam has a distinctive earthy smell. Inedible mushrooms have a bitter taste, but some types of false honey mushrooms lose it during heat treatment. Therefore, it is not recommended to take risks and try them at all.
  • The difference is also found in the hat. The color of the mushrooms themselves directly depends on the area where they grow. Shades are formed from the amount of penetrating sunlight. Real honey mushrooms have a light brown cap of a slightly muted tone, with dark scales visible on it. In false mushrooms it is dark red or gray-yellow. No scales are observed on the cap of poisonous honey mushrooms.
  • Particular attention is paid to the plate located on the underside of the cap. The mushroom is edible if it is cream or light brown in color. False heels are endowed with a yellow, green or olive plate.
  • Edible mushrooms can be identified by a specific edging (“skirt”) located below the cap. Some types of false mushrooms have a faint “ring”, but most do not have it at all.
  • A real mushroom is almost half as expensive as a poisonous one. The length of the leg of the latter is from 5 to 10 cm, and the edible one is 4-6 cm.

How to cook honey mushrooms with onions

If you doubt the quality of the collected mushrooms, then you need to boil them with onions. It is very important to subject the collected mushrooms to proper heat treatment, since the safety of the future dish will depend on this. Indeed, in addition to useful and nutritious substances, honey mushrooms tend to absorb radiation from the environment, including salts of heavy metals. That is why mushroom pickers should know that collecting honey mushrooms near industrial complexes or highways is highly not recommended.

How should you cook honey mushrooms with onions to protect yourself and your family from the serious consequences of poisoning? After initial cleaning, the mushrooms are washed in plenty of water to rid them of sand, soil and insect eggs. Place in a colander, let drain a little, add a new portion of water and put on fire.

As soon as the water becomes hot, throw the peeled and halved onion into the mushrooms. If suddenly there were poisonous representatives in the honey mushrooms, then the onion will turn blue. However, many mushroom pickers believe that this is not an indicator, because the mushrooms themselves contain enzymes that can affect the color of the vegetable.

If you nevertheless decide to determine the edibility of mushrooms using onions, and they turn blue, then it is better to throw out the honey mushrooms and not risk the health of your household.

Baby goat mushroom

Distribution: Kozlyak (Suillus bovinus) grows in pine and spruce forests in July - September. Distributed mainly in areas with temperate climates. It has a characteristic cap, usually slightly mucous and sticky, compared to other types of butter. Kozlyak, like all boletus, is a mycorrhiza-forming plant and grows with coniferous species (usually pine). It is most often found on sandy soils, especially abundantly in young artificial pine plantings. After heavy torrential rains they appear in large groups, which is encouraging, especially in the absence of other mushrooms.

Description: The goat is similar to a moss fly, only its cap is very convex, covered on top as if with brown skin, slightly sticky. The tubular layer is rusty in color and cannot be separated from the cap. The leg is the same color as the cap. The flesh is yellowish, slightly red at the break.

Note: The goat is the record holder for worminess. The usual picture is a carpet from Kozlyakov on the forest floor, but there is practically nothing to take. And even if, after cutting a mushroom, we see a clean cut, this does not mean that the cap is clean. In half the cases it will turn out to be wormy. Therefore, after checking a dozen or two goats for worms, you become completely disappointed in them and stop collecting altogether.

Signs of poisoning by false honeys

Symptoms are most often observed in the first hours after use . However, depending on individual characteristics, a person may feel poisoned after 10-12 hours.

  • Dangerous intoxication of the body occurs.
  • The victim experiences severe pain in the intestines, which leads to loose stools.
  • Nausea and vomiting occur.
  • Severe dizziness and drowsiness begin.

If these symptoms occur, contact an ambulance, as intoxication develops rapidly: the poison affects the gastrointestinal tract, central nervous system and circulatory system. If adequate assistance is not provided, there is a risk of coma and subsequent cardiac arrest.

Before doctors arrive, you need to rinse your stomach (if poisoning occurs an hour after consumption). The victim should drink two liters of water with potassium permanganate and induce a gag reflex. Laxatives and activated charcoal also help here.

  • The person must be placed on the bed and covered with a blanket.
  • Keep him hydrated at all times to prevent dehydration, which is inevitable with diarrhea and vomiting.
  • There should always be someone near the victim who will monitor the condition. To prevent coma, you need to use ammonia.

False honey mushrooms absorb substances from the soil and accumulate huge amounts of toxins. Vomiting, diarrhea and weakness are caused by heavy metals. Poisoning continues until toxic elements are completely eliminated. If during collection you have doubts about edibility, it is better to leave this specimen, since in nature there are twin mushrooms that are saturated with poisons.

  • Russula, despite the name, should be cooked for half an hour;
  • Before boiling, porcini mushrooms must be thoroughly cleaned, the film removed from the cap, rinsed, and then cooked for 40 minutes;

Cooking mushrooms is very simple. You need to put it in a saucepan, add a small amount of water, add salt and, after boiling, keep it in boiling water from five minutes to one hour, depending on the type. Proper cleaning of honey mushrooms using different cooking methods

Proper cleaning of honey mushrooms depends on the method of their preparation. Remove debris first.

The mushrooms intended for cooking are washed, leaving a film-like skirt under the cap. Its presence will not affect the taste, aroma, or beneficial properties of the food. But in the soup it will swell and become slimy; you can remove it with a knife with a thin blade or a toothbrush.

I first soak them briefly so that all the husks come off, and then I wash them in 4-5 waters, and there’s not even a trace left of the skirt.

Homochka

If honey mushrooms are prepared for frying, then after preliminary cleaning you only need to rinse the mushrooms. They do not remove the skirt: it will dry out during frying, becoming invisible.

The film must be removed before marinating and salting. In the marinade, the “skirt” swells, spoiling the appearance of the food. Both the lower parts of the caps and the legs are thoroughly cleaned with a knife or brush. Next is thorough rinsing.

Before freezing and drying, do not wash the mushrooms, as they will become soggy in water and become watery. There is a risk that honey mushrooms will darken. And it will take longer to dry mushrooms that have accumulated moisture. The surface must be dry. After initial cleaning, the caps and stems are carefully wiped with a soft sponge, and the films are removed with a brush. When freezing, rinsing is also not necessary.

Dangerous mushrooms that look like autumn honey fungus

Sulfur-yellow false honey fungus is the most common false honey fungus. He will become a dangerous “guest” of the table, since he is very poisonous. Its features:

  • The cap is from 3 to 7 cm in diameter, its shape is bell-shaped, but as the mushroom grows it becomes more prostrate.
  • The color is grayish-yellow or brownish-yellow. The center of the cap is darker and may have a reddish tint.
  • The leg is in the form of an even cylinder, the diameter of the leg is no more than 5 mm, the height is 8-9 cm. Its color is light yellow, its structure is fibrous.
  • The pulp is straw-colored, it tastes bitter, and has a repulsive odor.
  • The plates are thin, arranged very densely, and can be fused with the stalk. In young mushrooms, the plates are gray-yellow, then they acquire a greenish-olive color.
  • After consumption, the mushroom leads to severe intoxication; the patient requires emergency medical care.
  • Fruiting season is June-October.

In the photo on the left is an autumn honey fungus, on the right is a sulfur-yellow one. As you can see, the false honey fungus has a slightly different cap shape and lacks the characteristic “skirt.”

Brick-red false honey fungus - this mushroom gives rise to a lot of discussions. Some consider it poisonous, others consider it conditionally edible. But in any case, it is better to avoid this mushroom in the forest.

Features of the mushroom:

  • The hat resembles a ball that opens up with age. Its diameter is from 4 to 12 cm. The color is red-brown, the structure is dense, fleshy.
  • The leg is strong, smooth, and over time it becomes fibrous and curved. The diameter of the leg is up to 15 mm, the height is 6-9 cm. The color is uneven: the upper part is rich yellow, the lower part is dirty red. The ring-skirt is missing.
  • The pulp is hard, dirty white, and has a bitter aftertaste.
  • The plates are located very densely, they are narrowly adherent, gray-yellow in color. Over time they acquire a purple tint.
  • It is conditionally edible, but is not recommended for consumption.

What is the fastest cleaning method?

Try a quick way to clean honey mushrooms:

  1. Mushrooms are placed in a bowl of salted water at the rate of 1 large spoon of salt per 1–2 liters of water to get rid of insects and debris for 10 minutes. The bugs die and float to the surface, debris settles to the bottom, and maybe even the film-skirt disappears.
  2. The liquid is not poured out.
  3. Place the honey mushrooms in portions in a colander and rinse under cool water. The mushrooms are ready.

Honey mushrooms must be thoroughly rinsed to remove dirt, stuck leaves, and slugs. To do this, honey mushrooms are washed under water or soaked in salt water for a short time (10–15 minutes). This is exactly the “salt soaking” that I use for mushrooms. It helps to quickly cleanse mushrooms of dirt and insects. If we talk about long-term soaking, which is used for mushrooms with bitter milky juice (milk mushrooms, etc.), then such soaking is not used for honey mushrooms.
