For this recipe for mushrooms with vegetables in the oven, you need to cut the brisket into small cubes. Wash, dry and peel the mushrooms, cut into small slices. Fry everything together in heated vegetable oil for 15-20 minutes. Add nuts, chopped dill and rosemary, salt.

Cooking method

  1. First of all, before preparing stewed vegetables with mushrooms, wash all the vegetables in cold water and peel them (if the recipe uses young eggplants and zucchini, then it is not necessary to peel them).
  2. Cut the eggplants into triangles, cubes or strips. To prevent vegetables from turning into “porridge” when stewing, it is better to make medium-sized pieces – approximately 1.5 x 1.5 cm.

  3. To remove bitterness from eggplants, sprinkle the slices with salt and stir. Leave them to “marinate” in the bowl for 20 minutes at room temperature.

  4. Chop the onions and chop the champignons. I used mini mushrooms, so I cut 50% into halves and used the rest whole.
  5. Cut the carrots into cubes, triangles, strips or circles. Try not to make very large pieces.
  6. In vegetable oil (olive, coconut or refined sunflower), fry onions, mushrooms and carrots until golden brown.
  7. Chop red and Chinese cabbage.

  8. Cut the zucchini and tomatoes into cubes or triangles (about 1.5 x 1.5 cm).

  9. Rinse the eggplants “marinated” in salt with water to remove the bitterness and add all the chopped vegetables to them.

  10. Mix everything thoroughly and place in a frying pan with onions, carrots and mushrooms.
  11. Chop green onions and dill.
