Selection and preparation of ingredients

Vegetables can be fried, stewed, baked and stuffed. Zucchini or eggplant are often stuffed. This same recipe will bake a combination of juicy ingredients such as zucchini, cherry tomatoes, as well as mushrooms and potatoes. The latter will make the dish more satisfying.

How to cook “Vegetables with mushrooms in the oven”

Rinse vegetables and mushrooms under running water. Peel the onion and remove the core and seeds from the pepper. Cut all vegetables and champignons into pieces of approximately the same size.

Combine all the ingredients for the sauce, pour the resulting mixture over the vegetables and mushrooms, and stir.

  6. Cover the pots with lids. Bake for 35-40 minutes. After this time, be sure to try the potatoes. If it can be pierced with a fork, the dish is ready! It is advisable to turn off the oven and leave the dish there for another 20-30 minutes. Serve delicious pork with potatoes and mushrooms directly in pots with fresh vegetables.

It can be prepared in two ways.

First way. Carrots and onions, cut into strips, are sautéed, fresh tomatoes or tomato puree are added and sautéed together. Then combine with boiled rice, add salt, pepper, parsley and mix. The prepared peppers are filled with minced meat, placed on a baking sheet, poured with milk sauce, or sour cream, or sour cream with tomato, and baked in the oven until cooked. Second way. Carrots, parsley and onions are cut into strips, sautéed with the addition of tomato puree, vinegar is poured in, salt and sugar are added, and brought to a boil. The prepared peppers are filled with minced meat, placed in a saucepan or on a baking sheet, a little broth is poured in and simmered or baked. When leaving, the pepper is poured with the juice remaining after poaching. Stuffed peppers cooked in vegetable oil are served hot or cold.

Stuffed zucchini.

Zucchini prepared for stuffing is boiled until half cooked in salted water, filled with minced meat, sprinkled with grated cheese, sprinkled with oil and baked. Then they are poured with sauce (sour cream or sour cream with tomato) or sour cream and brought to a boil. For minced meat, carrots, parsley, onions, cut into strips or small cubes, are sautéed with the addition of tomato puree, chopped green onions, crushed garlic, ground black pepper are added and heated. Stuffed turnips.

It is prepared in the same way as zucchini, but the peeled turnips are boiled until completely soft and some of the pulp is removed with a spoon or recess and the resulting cavity is filled with minced meat.

Eggplants prepared for stuffing (depending on the size, these can be whole fruits, from which part of the pulp has been removed, or halves, cut along the fruit, cylindrical pieces), are salted, left for 10-15 minutes to release the juice, washed, filled with minced meat (vegetable, vegetable with mushrooms, vegetable with eggs). Then the eggplants are placed in one row on a baking sheet, a small amount of broth or water is added and baked in the oven.

For minced meat, carrots, parsley, and onions are sautéed with the addition of tomato puree. Tomatoes are fried separately. Prepared vegetables are combined, heated, salt, pepper, chopped garlic, finely chopped hard-boiled eggs, or fried mushrooms are added.

When leaving, the eggplants are topped with sour cream or sour cream with tomato sauce.

Stuffed tomatoes.
