Publication in the group: Dishes with mushrooms
Champignon is popular in cooking, easy to grow and belongs to the family of lamellar mushrooms. Champignons are prepared in various sauces (sour cream, soy, tomato, etc.), and also use heat treatment - oven baking or frying. Mushrooms can be eaten raw or pickled.
Fungi require soil rich in organic matter to grow and develop. In their natural environment, champignons grow on anthills and the bark of large dead trees. Mushrooms can be found in Europe, as well as in the pampas of Australia and Africa.
Edible champignons contain agaritine, an organic substance, a mycotoxin that is classified as a group 3 carcinogen by the International Agency for Research on Cancer. After decomposition reactions in the body, agaritine is oxidized to diazonium salt, which has a carcinogenic effect. However, the structure of the mushroom includes substances that are antioxidants and neutralize the harmful effects of agaritine.
The mushroom contains phenolic acids, which support healthy cells in the fight against tumor development. Polysaccharides in the tissues of the fungus, when they enter the human body, stimulate the immune system to an active response. The mushroom contains vitamin C and selenium, which are involved in the functioning of the immune system.
Porcini mushrooms are useful for people who have disorders of the cardiovascular system. They contain ergothioneine and beta-glucan, which reduce the risk of complications. Beta-glucan is a soluble fiber that is broken down by the body into a jelly-like state and can lower blood cholesterol levels. In addition, these plant fibers lower blood sugar levels and stimulate bowel function.

Step-by-step cooking process
- Mushrooms must be prepared: rinse under running water and remove damage and film on the mushroom cap. It is not recommended to soak the mushrooms, because they will absorb moisture into the plates and release it during stewing, which will make the sauce liquid and spoil the taste.
- Onions need to be peeled and cut into small cubes. When stewing, it will give the mushrooms a specific flavor.
- Mushrooms need to be chopped into thin slices (plates) or cubes.
- Pour vegetable oil into a baking dish (the container can be glass, ceramic or metal with a non-stick coating) and distribute it along the side walls and bottom of the pan. You can use a silicone brush for this.
- Pour mushrooms and onions into a container and distribute them along the bottom of the pan. Place the baking sheet in the oven, which must first be heated to 180°C. Leave at this temperature to evaporate the liquid for 10 minutes.
- You need to add sour cream, dry spices and salt. You need to add salt at this stage so that the taste of the salt does not evaporate with excess moisture during the initial stewing of the mushrooms.
- After adding sour cream, you need to mix all the ingredients and place the container with mushrooms in the oven for 20 minutes.
- You need to remove the mixture from the oven and place it in portioned bowls. It is recommended to serve warm.
Champignons in sour cream in the oven can be cooked immediately in portioned ceramic pots. They are convenient to serve the dish to the table and under the lid the stewing process is more intense. In this case, the stage of preliminary stewing of raw mushrooms can be replaced by frying them in a frying pan along with onions, and then packing them into pots. The quantity of products indicated in the recipe is enough for 2 servings.
What can I add?
Champignons have a pronounced mushroom flavor, which is dispersed during prolonged heat treatment. Thanks to the spongy structure of the mushroom, it is able to absorb foreign odors and tastes, which are retained in the final dish.

Popular additives when stewing mushrooms in the oven:
- onions - you can add both the root of the plant and its green part (feathers);
- garlic – use fresh chopped garlic or its dried version;
- bay leaf - using a large amount of seasoning will add bitterness to the mushrooms;
- black peppercorns - use both whole peas and freshly ground grains immediately before cooking;
- dry herbs – rosemary, oregano, savory, sage, thyme;
- greens - dry or fresh, add parsley, dill, celery, cilantro;
- nutmeg – the addition of the seasoning adds a woody taste and spiciness, leaving a fresh aftertaste in the mouth.
Champignons in sour cream in the oven acquire a piquant taste with the addition of garlic and fresh dill. To do this in 10 minutes. Before the end of cooking, you need to sprinkle the mushroom mixture with chopped seasonings. If you introduce garlic into a dish at the beginning of the cooking process, its flavor will disappear as the moisture evaporates. A mandatory seasoning for any method of cooking mushrooms is salt. To add variety to the taste of the final dish, soy sauce is used instead of salt during stewing (2 tbsp per 500 - 600 g of mushrooms). Depending on the additives in the sauce, the taste of the mushrooms will change.
