Fried “Three Comrades”: fried oyster mushrooms with onions and cream

Oyster mushrooms are very tasty and nutritious mushrooms. They contain many amino acids, vitamins and microelements, which are very beneficial for the human body. These mushrooms can be pickled, salted, fermented, stewed and fried. They also make excellent sauces for main dishes.

Although oyster mushrooms are not wild mushrooms, they have a mushroom aroma and their own distinct taste, so various dishes using them also become tasty.

If you make a sauce with them, it can be served with any dishes such as pasta, spaghetti, carrots and other types of pasta. The sauce can also be served with noodles, dumplings or dumplings; it turns out much tastier and more interesting than with sour cream.

Unfortunately, sometimes housewives forget that a simple dish can be complemented with delicious oyster mushroom sauce. It doesn't take much time or effort to prepare, and it enhances any dish. Adding oyster mushroom sauce can make any pasta or potato dish even more nutritious.

Which oyster mushrooms to choose

Oyster mushrooms, like other edible mushrooms, grow in forests. Just look for them not under your feet, but in the trees. Oyster mushrooms settle on stumps, trunks, branches of oaks, hazel and other trees. They love moisture.

But we live in the city. That's why we get oyster mushrooms in the store.

And yes, we have no way to check whether they taste the same as those from the forest or not. People who conducted a similar experiment claim that wild mushrooms are much more flavorful and that urban mushrooms are like rubber compared to them.

Step-by-step preparation of fried oyster mushrooms with onions

  1. Wash and then dry the oyster mushrooms. Cut them into strips. The leg is usually not used, as it turns out to be harsh. But I still cut it into this dish, but I try to do it as thinly as possible.

  2. Peel and wash the onion (1 large or 2 medium ones), cut it into half rings.

  3. Fry the onions and mushrooms separately in hot oil. I like to fry them separately because if you add mushrooms to the onions, they won’t cook as well as I would like. You can first fry the mushrooms and then temporarily transfer them to a plate.

  4. Then add a little more vegetable oil and add the onion to fry. Fry it until golden brown.

  5. Now mix the onions with mushrooms, salt and pepper.

  6. Add the chopped garlic clove to the pan.
  7. Pour in 100 gr. cream of any fat content (you can even use sour cream), stir. Cover with a lid and simmer the mushrooms in the cream for another 5 minutes. The cream will be absorbed into the fibers of the mushrooms and they will become even tastier.

  8. Ready mushrooms can be decorated with finely chopped dill or green onions.

Serve delicious oyster mushrooms with side dishes of boiled rice, pasta or potatoes, garnishing them with fresh herbs or sliced vegetables.

The recipe for oyster mushrooms is simple and quick. We will need:

  • oyster mushrooms (as many as you want)
  • onion (garlic if desired)
  • cream (if thick, 4 tablespoons)
  • oil (sunflower, olive, butter - any for frying)
  • teaspoon flour

If you want to try growing oyster mushrooms at home, then use only the ears in the dish. Set aside the lower parts - the stalks. This is a material that perfectly infects the soil and is capable of producing fruit even at home.

How to fry oyster mushrooms, step-by-step recipe

  1. We do not cut the mushrooms finely. We assume that they will boil down 3 times.

  2. Place the mushrooms in the pan and add a little water. We do not cook the oyster mushrooms, but simmer them for 5-7 minutes.
  3. Add finely chopped onion (and garlic). Mushrooms love onions, so we assume a proportion of 30-50 percent of the number of mushrooms.

  4. When the water has evaporated, add oil. Fry it.
  5. When the contents of the pan are browned, add 4 tablespoons of heavy cream. If the cream is runny, you can add more.
  6. Add 1 teaspoon of flour. If it doesn't thicken, add more.
  7. After a minute we turn it off.

Don't rush to add seasoning and salt. They interrupt the taste and aroma of mushrooms. If the julienne seems cloying, you can season the finished dish with salt.

Mix fried oyster mushrooms with boiled pasta to make an amazing mushroom paste (you don’t need to add cream or flour to this dish).

Oyster mushroom mushroom sauce with cream

Sauces are a good seasoning for any dish and enhance its taste. We suggest making a creamy sauce from oyster mushrooms.

Ingredients:

  • oyster mushrooms – 400 gr;
  • shallots – 3 pcs.;
  • 10% cream – 150 g;
  • vegetable oil – 1 tbsp. l.;
  • butter – 20 g;
  • nutmeg - on the tip of a knife;
  • salt - to taste;
  • ground pepper to taste.

Step-by-step preparation:

For the creamy oyster mushroom sauce, you will need fairly affordable ingredients (see list above).

  1. You can take either shallot or onion, it’s just that the former has a more delicate taste and there is no obvious bitterness in it, so if you have such an onion, it’s better to use it for the sauce.
  2. Then cut the oyster mushrooms into small pieces. By the way, you don’t need to wash the mushrooms before cooking, just cut off the roots and clean off any residue, and that’s it. If you wash the mushrooms, they release a lot of liquid during cooking, which lengthens the cooking process and reduces the quality of the dish.
  3. Heat vegetable oil and butter in a frying pan.
  4. Fry the chopped onion over low heat until soft.
  5. Then add the mushrooms to the pan and continue stir-frying.
  6. When they have reduced in volume and lightly browned, add cream, grated nutmeg, ground pepper and salt to the pan. Once boiling, cook for about five minutes until the sauce thickens slightly.
  7. After this time, remove the pan from the heat. To make the sauce thicker, do not add flour, just grind half the amount in a blender.
  8. Pour the crushed mixture back into the sauce and stir.
  9. Taste to see if it is salty enough.

Transfer the prepared oyster mushroom cream sauce into any bowl and serve hot with any dish.

How to grow oyster mushrooms at home

Some people grow oyster mushrooms at home and harvest the mushrooms all year round. You need a room with high humidity - up to 85 percent. The air temperature there should range from plus 15 to plus 35.

Up to 5 fruit-bearing bags can fit on one “square” meter. Each is a plastic bag 75 cm high, in which 2.5 buckets of substrate with mycelium and 200 g of fungal spores are poured in layers. The technology is well described in this video.

Pasta in creamy sauce with oyster mushrooms and tomatoes

Pasta in creamy sauce - farfalle, painted in five colors. We chose creamy sauce with oyster mushrooms and cherry tomatoes as the pasta sauce.

Pasta in a creamy sauce with fresh mushrooms and tomato slices is an ideal breakfast dish. Italian curly farfalle pasta in the form of bows or butterflies is very popular in the northern Italian provinces of Lombardy and Emilia-Romagna. According to various sources, the appearance of this paste is no less than 5 centuries old. Farfalle means butterfly in Italian. There are small, large, multi-colored and plain farfalle. Be that as it may, children love this pasta very much. In any case, it’s always easier to come up with a story to get the kids to eat breakfast.

Farfalle is a square of dough pinched in the middle. In the middle, the layer of dough is thicker, so this pasta is always a little more undercooked in the center, this is a feature. In addition, given the small thickness of the wings, during cooking you need to stir very carefully, or not stir at all. They simply break.

Farfalle, as a rule, has a smooth surface, so it holds liquid sauces less well. It is worth preparing sauce with large pieces, or very thick sauces. Alternatively, you can mix ready-made farfalle with vegetables, pieces of meat or mushrooms. However, thick, creamy sauces are fine - pasta in farfalle cream sauce is the best option.

Paste butterflies can often be found in a variety of colors. During the preparation process, the dough is colored with natural products: beets, spinach, egg yolk, carrots. There are also more exotic additives, for example, cuttlefish ink.

The cooking time should not be adjusted at your own discretion. You need to cook exactly as much as indicated by the manufacturer on the package. In my experience, attempts to add or reduce time always lead to disastrous results.

Pasta in cream sauce today was made from farfalle, painted in five colors. Judging by the label, the following materials were used for coloring: spinach, tomatoes, oregano, beets, and cuttlefish ink. The recommended cooking time is 13 minutes. We chose creamy sauce with oyster mushrooms and cherry tomatoes as the pasta sauce.

Delicious pasta in creamy sauce.

Oyster mushrooms stewed with potatoes

One of the easiest and fastest ways to cook fried oyster mushrooms is with potatoes and carrots in a frying pan. This tasty and satisfying dish will be an excellent alternative to both lunch and dinner, complementing the everyday and, if served correctly, a holiday table.

To prepare, take 200 gr. mushrooms, 4 potatoes and one carrot. Mushrooms and vegetables must be cleaned. Cut the potatoes and oyster mushrooms into slices, and grate the carrots on a coarse grater. Use spices to taste.

It would seem like such ordinary products. Their taste has long been known to everyone. But the sauce with cream transforms their union even more, as it adds juiciness, piquancy and novelty. I would also like to note that you can cook any mushrooms with bacon. Only forest fruits are available in fresh form only at the time of their collection, in the fall. The mushrooms will release liquid - no problem, cook and stir until it evaporates. 6. Next, add chopped garlic, pour in cream, stir and cook for no longer than 5 minutes.

Before adding cream to a dish, it is advisable to heat it so that it does not immediately curdle due to high temperature.
