It is recommended to fry oyster mushrooms without a lid so that they brown; under the lid they will steam in their own juice.
It is not recommended to cook them together with potatoes - you need to fry them separately, then combine them. The reason is that the mushrooms will release a lot of moisture and the potatoes will not fry, that is, a crust will not form.
A simple recipe for every day
The products you will need are the following:
- 300 g oyster mushrooms;
- 1 medium sized onion;
- 70 ml refined sunflower oil;
- ½ teaspoon salt;
- 1 pinch of ground black pepper.
Stages of work:
- Cut off the thick base of the mushrooms and carefully wipe the caps with a damp cloth to remove dirt.
- Cut the onion into thin half rings. Place it in a frying pan in heated oil, bring to a soft state while stirring.
- Add the mushrooms, stir, fry for five minutes, then sprinkle with pepper and salt, continue to cook, stirring, until golden brown, about 12 minutes.
Serve the oyster mushrooms with onions immediately while hot.

The following products will be needed:
- oyster mushrooms with large caps – 0.5 kg;
- cow's milk – 100 ml;
- chicken eggs (category C-1) – 2 pcs.;
- wheat flour, premium - 3-4 tbsp. l.;
- salt (you can take Adyghe), spices (coriander, pepper);
- garlic – 2-3 cloves;
- oil - for frying.
Step by step recipe:
- Separate large mushroom caps from stems. Beat the mushrooms through the film using a meat mallet. Add salt and season with spices and set aside for now.
- Prepare the batter. To do this, pass the garlic through a press and place it in a deep bowl. Send 2 eggs there, add a little salt and spices. Beat with a whisk, gradually adding flour. Then dilute the batter with lukewarm milk. You may not need the entire amount of liquid - the batter should be fluid but enveloping.
- Pour enough oil into the pan so that the mushroom chops float in it. Heat it over moderate heat. Dip the broken caps into the batter and immediately lay them out to fry. Cook on both sides until golden brown.

Stages of work:
- Wipe the mushrooms with a napkin, trim the base, leaving only the caps. Divide large ones into plates.
- Heat the oil in a frying pan, put the oyster mushrooms on it, fry over medium heat until the moisture evaporates. Stir occasionally.
- Cut the onion into quarter rings, place in the pan with the mushrooms, then add melted butter, stir and stir-fry until the onion becomes translucent.
- When the mushrooms acquire a golden color and the onions are soft, add salt, pepper, and stir.
- Add sour cream. When it starts boiling, turn the heat to low, cover and simmer for 10 minutes.

- When purchasing fresh mushrooms, it is better to give preference to strong, not overdried, dense and elastic.
- The brightest taste and good texture are found in small young specimens, which contain a large amount of useful substances and vitamins necessary for the body. Old and overgrown ones have fibrous and tasteless pulp, which when finished will resemble rubber.
- To determine the young age of spore organisms, you need to break off a piece and make sure that the mushroom is juicy, soft, and with a white tint.
- And it is also necessary to examine each specimen, pay attention to the integrity of the cap, make sure there are no cracks, damage, or yellow spots on the edges.
- The freshness of oyster mushrooms is indicated by their characteristic pleasant aroma. A pungent and repulsive odor is a sure sign of a spoiled product that is unfit for use.

With potatoes
For 3 servings you need to prepare the following products:
- 400 g oyster mushrooms;
- 5 pieces. potatoes;
- 2 onions;
- 4 tbsp. tablespoons of refined vegetable oil;
- salt, ground pepper.
Stages of work:
- Peel the potatoes, wash them, cut them into bars, rinse again and dry with a towel.
- Cut the onion into small cubes.
- Cut off the mushroom caps, wipe, and divide into slices.
- Heat oil in a frying pan, add potatoes, fry until golden brown. At the very end of cooking, add salt and pepper. If desired, you can add seasonings: herbs de Provence, ground ginger, turmeric, garlic, etc. Place on a paper towel to absorb excess fat.
- Add oil, fry the onion until translucent, add the mushrooms and cook for 7 minutes until golden brown. Salt and pepper.
- Place the potatoes in a frying pan with mushrooms and onions, stir, and keep on low heat for another five minutes. If desired, you can add a little sour cream a few minutes before the end of cooking to soften the taste. Serve the dish immediately while it is fresh and hot.

- Add oyster mushrooms (use only the caps, the stems are too hard) to the meat, stir and continue cooking for ten minutes. The liquid should completely evaporate.
- Pour in the cream, add seasonings, salt, pepper and stir. Reduce heat to low, cover and simmer until the creamy sauce thickens for about seven minutes.
- Chop fresh herbs, add to a dish, and stir.
- Serve immediately after cooking.

- 650 g oyster mushrooms;
- 5 cloves of garlic;
- 100 g green onions;
- salt;

Stages of work:
- Clean the oyster mushrooms from dirt and tear them into slices.
- Grate the carrots using a Korean carrot grater.
- Cut the onion into strips.
- Heat vegetable oil in a frying pan.
- When it sizzles, add the onion and fry for two minutes. Then add the carrots and cook with the onions for four minutes.
- Place the mushrooms in the pan and cook, stirring, for about 15 minutes over medium heat.
- A couple of minutes before the end of cooking, add salt and pepper.
