Milk mushroom is a very valuable, protein-rich mushroom. The healing properties of this mushroom are also known among people. Pies made from pickled milk mushrooms turn out delicious and very filling!

Ingredients

  • for test:
  • flour – 400-500 g
  • butter – 100 g
  • yolks – 3 pcs.
  • milk – 100 ml.
  • dry yeast – 7g
  • egg – 1 pc.
  • granulated sugar - a pinch
  • salt - a pinch
  • warm boiled water – 100 ml.
  • For filling:
  • salted white milk mushrooms – 400 g
  • onion – 1 pc.
  • green onion – 1 bunch, rather big
  • ghee or vegetable oil
  • + flour for dusting

Step-by-step cooking recipe

Sift flour with salt.

Dissolve the yeast in warm boiled water, stir and wait for a lot of bubbling, about 10 minutes. Pour in a third of all the flour, stir thoroughly and put in a warm place for half an hour.

Beat the yolks with a pinch of sugar. Pour in warm milk and stir. Add softened butter, remaining flour and suitable dough. Knead into a homogeneous plastic dough.

Transfer the dough to a work surface dusted with flour and knead until the dough does not stick to your hands. Place the dough in a bowl, cover with a towel and let rise in a warm place for an hour and a half.

To make the filling, rinse the mushrooms from the brine and let the liquid drain completely.

Peel the onions and cut into small cubes. Chop the green onions as finely as possible. Cut the mushrooms into small pieces.

Melt ghee in a frying pan (or use vegetable oil), first fry the onions for 7 minutes, add mushrooms, fry for another 10 minutes, add green onions and cook for another 5 minutes. Cool the filling.

Divide the risen dough into pieces comparable in size to ping pong balls. Roll each piece into a flat cake, place a tablespoon of filling in the center, pinch the edges.

It was decided to make the pies fried, but during the modeling process, the decision changed, we women are so fickle. And I wanted to compare the taste, since the authors promised that the fried ones would be incomparably tasty.

So, heat the oil (ghee or vegetable) in a frying pan and fry the pies on both sides until golden brown. Place the finished pies on crumpled paper towels in a saucepan, cover with a lid until the crust becomes soft.

Or place the pies on a greased baking sheet, let them rest for 15 minutes, brush with beaten egg and bake in an oven preheated to 180 degrees for 20 - 25 minutes.

Serve pies warm or cold. For tea, for broth, or just like that, take them out of the saucepan one by one until they are all gone.

A pie fresh out of the oven is the most important treat on the table for any tea party. We suggest baking an undeservedly forgotten pie with milk mushrooms. It's very simple, the most important thing is to choose the right ingredients and knead the dough correctly.

A distinctive feature of such baking is that the ingredients are available at any time of the year. Fresh, dried, and even salted mushrooms are suitable.

The recipe is for 4 servings. Preparation: 40 minutes. Cooking: 1 hour 40 minutes.

Fried pies with milk mushrooms and onions

For the test:

  • 1 kg flour

  • 1 cup boiled milk mushrooms

  5. Melt the fat in a frying pan and fry the onions first for 10 minutes, and then the mushrooms. At the end, add chopped green onions and cook for another 5 minutes. Cool the filling to room temperature.

Recipe for making a pie with salted saffron milk caps from yeast dough

Making a pie with saffron milk caps is quick and easy using ready-made store-bought dough. You will need the following ingredients:

  • kilogram of ready-made yeast dough;
  • 4 tablespoons of strong tea;
  • 0.5 cups mustard oil;
  • 6 medium-sized onions;
  • ground pepper and salt to taste;
  • one and a half kilograms of salted saffron milk caps.

Preparation:

  1. Rinse the salted saffron milk caps under water to get rid of remaining brine and excess salt. Let them drain in a colander. After this, cut the fruits into small pieces.
  2. Heat a frying pan and add vegetable oil to it. Fry the saffron milk caps in oil until golden brown.
  3. Peel the onion. Sauté finely diced onions in a separate frying pan. In order for them to acquire a bright and rich golden hue, a little granulated sugar is added to them.
  4. Mix onions with mushrooms and add salt to taste.
  5. Roll out the finished dough into a layer and divide into two parts. Roll out one half into a thin layer and sprinkle with a little flour. It will collect excess oil and moisture from the filling. Add onion-mushroom mixture.
  6. Roll out the second half of the dough and cover the formed pie with it. Pinch the edges and prick the surface with a fork so that excess air escapes and the filling is better baked. You can use egg white or strong tea to brush the dough. This will help the pie get a nice crust.
  7. Bake the product at 200 degrees Celsius for 30 minutes until done. Before serving, you can decorate it with fresh herbs and grease with vegetable oil.

  • Flour 800 g
  • Water 1.5 cups
  • Vegetable oil 120 g
  • Yeast 15 g
  • Salt 0.5 teaspoon
  • Sugar 0.5 tablespoon
  • Buckwheat 500 g
  • Dried mushrooms 100 g
  • Onions 1 pc.
  • Salt for filling to taste

Prepare a dough from half the flour, water and yeast and place in a warm place. Add salt, sugar, 2 tablespoons of vegetable oil, remaining flour to the dough and knead the dough. It should not stick to your hands. Place the dough in the pan and let it rise. Pour boiling water over dried mushrooms and soak for 10 hours. Boil the mushrooms and chop very finely. Cook crumbly buckwheat porridge. Peel and chop the onion, fry in vegetable oil. Mix onions, mushrooms and porridge, add salt and heat in a frying pan with the addition of vegetable oil. Divide the dough into two parts and roll both out. Place the cooled filling on one layer of dough, cover with the other and pinch the edges. Place the pie in a warm place for 15–20 minutes. Bake in a hot oven for 40–50 minutes.

Baking a pie

  1. Roll out 2/3 of the dough into a circle with a diameter of 23 cm. Place it in the mold, raise the sides (see how it looks in the step-by-step photos).
  • Place the filling in the center of the bottom circle. Gently smooth it over the entire area with a spoon.
  • Roll out the remaining dough so that the resulting circle can cover the pie. Brush the edges of the pie with cold water and cover it.
  • Fill, trim off excess dough, roll out scraps, cut out grass leaves and mushrooms, decorate the top of the pie.
  • Make a hole in the center of the top layer so that steam can escape from the filling while the pie is baking.
  • Brush the pie with beaten egg and bake in the oven at 1700 until golden brown, 25 to 30 minutes.

    Attention! If you're planning a holiday dinner, you can make the pie ahead of time using a different pastry dough, such as puff pastry, and then store the uncooked pie in the refrigerator to chill overnight. The next day, preheat the oven and bake.

    Ingredients for a pie with fresh milk mushrooms and potatoes require the following products:

    • 200 g fresh milk mushrooms
    • 2 onions
    • 2 tbsp. spoons of butter
    • 1 teaspoon sour cream
    • Salt

    Before you make a pie with milk mushrooms and potatoes, you need to prepare the dough:

    • 600 g potatoes
    • 4 eggs

    3. Line a baking sheet with parchment and place the thinly rolled dough on it. Place the filling on top and sprinkle with chopped green onions. Bake the pie at 200 degrees Celsius for about 20 minutes.

    The ingredients for a pie with fresh milk mushrooms are products such as:

    • 30 g milk mushrooms
    • 30 g ghee
    • 50 g rice
    • salt pepper

    Roll out the yeast dough, put the prepared minced meat on it, cover with the other half of the juice, pinch, brush with egg and bake in the oven for 25-30 minutes. For minced meat, use fresh mushrooms, you can use assorted ones. Scald them, place on a sieve, dry, chop and fry in butter along with the onion. Add boiled rice and salt.

    These fried pies with potatoes and milk mushrooms have a short preparation time and are a real lifesaver at the moment when “guests are on the doorstep”.

    Making pies with mushrooms and cabbage is not so easy, since the housewife must have experience in cooking to knead the dough and model it. Ingredients you will need:

    • 300 milliliters of milk;
    • 1 glass of water;
    • about 25 grams of dry yeast;
    • 3 tablespoons granulated sugar;
    • 3 chicken eggs;
    • 3 tablespoons sunflower oil;
    • 3 tablespoons of mayonnaise sauce;
    • 1.5 teaspoons table salt;

    • flour – 500 g;
    • butter – 150 g;
    • salt – 1 tsp;

    1. Cut the fruiting bodies into small pieces of about 2-3 cm.
    2. Wash well and fry in sunflower oil.

    To prepare pies with salted mushrooms and rice you need to take:

    • 500 grams of yeast dough;
    • 400 grams of salted mushrooms;
    • 4 medium sized onions;
    • 300 grams of boiled rice;
    • 200 milliliters of vegetable oil.

    We prepare this dish according to the following algorithm:

    1. Salted fruits are washed under plenty of water to wash away any remaining salt. Next, they are soaked in warm water for thirty minutes, squeezed out and fried in a frying pan heated without oil until the water evaporates.
    2. Finely chop the onion and add to the mushrooms. Rinse the rice and cook until cooked according to the proportion indicated on the package. Add oil to the onions and mushrooms and fry this mixture until golden. Cook the rice until the liquid evaporates and add to the general filling.
    3. Roll out the dough, form into flat cakes and stuff them. Place seam side down on a greased baking sheet. Place in a preheated oven for half an hour and cook over medium heat.
