Do you love homemade pizza? For example, I adore it; lately I’ve been cooking very often. I recently tried a great recipe with pickled cucumbers and really liked it. What can I say? I wasn’t the only one who liked it, after a couple of minutes there wasn’t even a crumb left from the baked goods.

I prepare a very simple dough with dry yeast, and use the most common filling: cheese and sausage, but today I added cucumbers, how delicious it is, if anyone doubts whether it’s worth cooking or not, then I can say there’s no need to think twice. Get ready, it's worth it.

Fragrant pastries attract all family members to the kitchen. The taste and appearance are excellent. I just cold-pickled the cucumbers and they turned out like barrel cucumbers. I made it small, it’s very convenient to cut into circles.

Today I will reveal all the cooking secrets and share my favorite and quick dough recipe. I am sure that once you try this dish, you will cook it constantly until you get tired of it.

Pizza with fried mushrooms and pickles

To make pizza with fried mushrooms and pickles, you will need the following ingredients:

  • 300 g flour;
  • 600 g of any fresh mushrooms;
  • 300 g butter;
  • 150 g sour cream;
  • 2 eggs;
  • 1 onion;
  • 1 pickled cucumber;
  • 30-40 g hard cheese;
  • vegetable oil - for frying;
  • soda on the tip of a knife, slaked with vinegar;
  • a pinch of salt;
  • ½ teaspoon sugar.

Soft butter must be whipped and mixed with flour, half the sour cream, a pinch of salt and sugar. Afterwards, you need to add a little soda, quenched with vinegar, to this mixture. Knead a homogeneous mixture, roll out into a thin layer and place on a baking sheet.

    Chop the onions and mushrooms, fry them in vegetable oil, add salt and place on the crust. Sprinkle pizza with sliced ​​cucumber. Add grated cheese to the workpiece and pour everything with a mixture of beaten eggs and the remaining sour cream. The dish is baked in the oven for 40 minutes.

Tender dough with mayonnaise and sour cream

The dough for this recipe is universal - it can be used for pizza, which is baked in a mold with sides, or you can add more flour (50-100 g) and roll it out using a rolling pin. It turns out very tender and does not go stale for a long time.

In order to prepare 8 servings (one pizza base), you need 7-10 minutes, excluding proofing.

What you will need

  • 2 eggs
  • 70 g sour cream
  • 70 g mayonnaise
  • 180 g flour
  • ½ tsp. baking powder
  • salt to taste

How to cook:

  1. Mix sour cream with mayonnaise and baking powder.
  2. Add salt and eggs, beat with a fork.
  3. Add flour sifted through a sieve in portions and knead into a soft, airy dough.
  4. If rolling is meant, then add more flour (as much as it takes) and knead for 2-3 minutes on a smooth surface.
  5. Let the dough rest for half an hour in a warm place.

Pizza with mushrooms, cheese and pickled cucumbers

For the next version of pizza with mushrooms, cheese and pickled cucumbers, you need to use the following products:

  • 8 tbsp. spoons of flour (it is better to take wheat);
  • 120 ml water;
  • 250 g fresh champignons;
  • 2 pickled cucumbers;
  • 1 PC. onions;
  • 6 g dry yeast;
  • 60 g hard cheese;
  • 60 g ketchup;
  • ½ teaspoon sugar;
  • 1 tbsp. a spoonful of vegetable oil + for frying.

To give the dish an unusual flavor, you can add Provençal herbs.

They go well with the ingredients and add variety. Oregano and basil, oregano and other spices are suitable. For a successful result, you must follow the instructions.


Stir sugar and yeast in a quarter glass of warm water and leave the mixture for 5 minutes. insist.

  • 3 cups flour;
  • 300 g butter;

  • 600 g of any fresh mushrooms;
  • 1 PC. onions;
  • 2 tbsp. spoons of olive oil;
  • 2 eggs;
  • ½ teaspoon of soda;
  • vinegar 3% – 1 teaspoon;
  • 1 teaspoon sugar;
  • 1 pickled cucumber;
  • 200 g hard cheese;
  • salt to taste.

Fry finely chopped mushrooms and onions in olive oil and add salt. Beat soft butter and add 6 tbsp. spoons of sour cream, a pinch of salt and sugar. Add soda slaked with vinegar and sifted flour into the mixed mixture.

Knead the dough for 6-7 minutes, then spread it on a greased baking sheet. Place chopped cucumbers and fried mushrooms on the prepared base, add a little salt to the pizza. Pour the filling into the crust with a mixture of the remaining sour cream, beaten with eggs. Sprinkle grated cheese on top and bake in the oven for 40 minutes.

Cooking method

  1. We start the process naturally by kneading the dough for the base - mix the required amount of sifted wheat flour with salt, sugar and dry quick-acting yeast.

  2. Now add slightly warmed water and olive oil to the resulting dry mixture.

  3. Then we knead the dough - after an hour and a half it will fit well and you can work with it.

  4. After the specified time, you can start preparing the filling - cut the washed and dried mushrooms into slices.

  5. Diagonally ringed pickled cucumbers.

  6. Cut the dough into 3 equal parts - each will make a pizza with a diameter of about 30 cm.

  7. Roll out one third of the dough into a round layer and immediately place this piece on a baking sheet.

  8. Now just grease with tomato sauce.

  9. We lay out all the ingredients used in turn - mushrooms, cucumbers.

  • 1.5 cups flour;
  • 1 teaspoon baking powder;
  • 100 ml water;
  • 4 tbsp. spoons of olive oil;
  • 200 g fresh champignons;
  • 150 g of any minced meat;
  • 1 small onion;
  • 1 pickled cucumber;
  • 1/2 teaspoon salt;
  • 5-6 tbsp. spoons of tomato puree.

It is worth noting that instead of champignons, you can use any other mushrooms, but they will need to be boiled first. You can also replace the minced meat with sausages or sausage at your discretion.

  1. The sifted flour must be mixed with baking powder to make the dough more fluffy.
  2. Add water and oil to the container with flour, kneading the mixture with a spoon and then with your hands. When the dough stops sticking strongly to your hands, you can put it on the table and continue kneading until the dough becomes elastic.
  3. Add salt to the minced meat, cut the cucumbers into circles, and the onion into rings.
  4. After the champignons are washed, they should be blotted with paper towels and cut into thin slices.
  5. Spread the dough in a thin layer on a baking sheet and brush with tomato puree.

You can also prepare another version of pizza with mushrooms, chicken and cucumbers. To do this you will need the following ingredients:

  • 2.5 cups flour;
  • 1 glass of water;
  • 3 tbsp. spoons of olive oil;
  • 2 teaspoons of dry yeast;
  • 1 teaspoon salt;
  • 300 g boiled chicken meat;
  • 200 g of any fresh mushrooms;
  • 200 g hard cheese;
  • 200 g pickled cucumbers;
  • 2 eggs;
  • 3 tbsp. spoons of sour cream;
  • 3 tbsp. spoons of tomato puree or paste;
  • 1 PC. onions;
  • “Pizza” spices to taste.

You can use not only chicken meat, but it is worth considering that the cooking time in this case will be longer. You can also not just replace it, but make a combination of several varieties.

  1. In a bowl, mix flour, salt, dry yeast and gradually pour in warm water, stirring the mixture.
  2. Add 2 tbsp to the dough. spoons of oil and knead for 6 minutes. Leave the resulting workpiece to rise for 30 minutes. in a water bath.
  3. Fry finely chopped onion in 1 tbsp. spoon of olive oil.
  4. Add chopped mushrooms to the onion and simmer for 10 minutes until the liquid evaporates.
  5. Cook the meat for 15 minutes.
  6. Chop the boiled meat and cucumbers.
  7. In a mixer, mix grated cheese, sour cream and eggs.
  8. When the dough is ready, you can divide it in half and leave some in the freezer for next time. If you prefer to end up with a fluffy cake, you can place the entire mass on a baking sheet.
  9. Grease the prepared dough with tomato puree and place half of the chopped cucumbers and mushrooms on it.
  10. Add meat and remaining cucumbers on top of the finished filling layer.
  11. Pour the egg mixture over the pizza, add a little salt and add pizza spices if desired.
  12. Bake the dish in the oven for 25 minutes.

Don’t forget that in any pizza recipe, greens will be a harmonious addition: parsley, basil, cilantro.
