Combine flour, salt and baking soda with lemon juice. Gradually add water, stirring with your hands. Sprinkle the table with flour and knead the dough well.
Roll out the mixture into a thin layer, place on a parchment-lined baking sheet and grease with oil. Peel large tomatoes and puree with a blender. Spread the puree over the dough and sprinkle with basil leaves.
Cut half of the eggplant into slices and the other half into small cubes. Place eggplants and cherry tomato slices on the pizza, brush with oil and add salt.
Season the pizza with dried herbs and place in an oven preheated to 180°C for 15–20 minutes. Garnish the finished dish with basil leaves.
