1. Prepare the products. Since our main ingredient is potatoes, we pay a lot of attention to them. It needs to be cleaned first. And wash it right away, because dirt eats into it very easily. Then it will be difficult to remove it, only by cutting off the top layer. Once washed, fill with water.
The most ideal frying pan that is suitable for frying potatoes is cast iron. That's basically what I use.
2. The next step is cutting. You can cut it in two ways: on a cutting board or with your hands. I always use the second option. First, cut it in half, and then cut it into plates, as shown in the pictures below.
A little advice: it’s better to cut it into a container with water and keep it there. This will release excess starch.
3. The chopped potatoes need to be dried. To do this, place it on a regular or paper towel. Let him dry.
4. Take a frying pan and put it on fire. Pour in vegetable oil, a layer approximately 5 mm high. Heat until light smoke appears. And carefully throw in the potatoes.
5. Mix carefully, lifting the bottom layer. There is no need to change it often. If you do this often, a golden crust will not form. Once you have poured it in, you can peel the onion and chop it finely.
6. 10 minutes should pass from the start of falling asleep and then you can add salt. Once salted, add onion and mix well. After adding the onion, the potatoes need to be stirred more often, as they may burn.
I do not recommend covering the pan with a lid. Otherwise, you will end up with boiled rather than fried potatoes.
7. Test for salt during cooking. And check the readiness with a fork. If it pierces easily, it means it’s ready.
8. Once it is fried, it will need to stand. To do this, cover the pan with a lid and let stand for 10 minutes. And the fried potatoes are ready.
