I continue my culinary experiments with fish dishes, this time I will share an option on how to cook fish with mushroom sauce. It will be delicious to serve both white and red fish with this sauce.

With sour cream sauce

To create this dish you will need the following ingredients:

  • Pink salmon with skin (fillet) – 700 grams;
  • Quick-frozen champignons – half a kilogram;
  • Onions - a couple of heads;
  • Soy sauce - one tbsp;
  • Sour cream – three tbsp;
  • Salt, ground black pepper, any other spices - to taste;
  • Lemon juice - tbsp;
  • Olive oil – three tbsp.


Cooking time is one and a half hours.
Number of servings – 4.

Step-by-step preparation:

  1. Rinse and dry the pink salmon thoroughly with a paper towel or napkin. Then cut it first into two equal parts, and then into portioned pieces.
  2. Place the fish pieces in a deep bowl, pour soy sauce over them. At this point, if you want, you can add any spices. Fresh dill or rosemary goes well with fish dishes.
  3. Leave the fish to marinate for half an hour without putting it in the refrigerator.
  4. Rinse the champignons under running warm water, and then cut them if you have whole ones.
  5. Chop the onions into halves of rings.
  6. Heat one or two tablespoons of oil in a saucepan, then throw in the onion half rings and fry until the color changes.
  7. Now throw the mushrooms into the saucepan and simmer until all unnecessary moisture has evaporated. At the same time, add salt and pepper.
  8. Mix sour cream, lemon juice and olive oil well. The resulting mass will act as a sauce.
  9. Grease the pan where you are going to bake the fish with oil.
  10. Place the pieces of pink salmon in a mold and coat each of them with the sauce you made.
  11. Place the mushrooms next to the pink salmon.
  12. Pour the rest of the sour cream sauce over everything. Now you can send the food to the oven, preheated to 180 degrees. Baking will take a little time - twenty to thirty minutes.

When the fish is ready, immediately take it to the table hot. It turns out very juicy, appetizing and will definitely please your relatives or guests.

Tip: When stewing mushrooms and onions, you can add truffle salt. It suits champignons perfectly and creates an ideal combination with them.

With broccoli

You will need the following ingredients:

  • Pink salmon fillet – kilogram;
  • Broccoli – 300 grams;
  • 10 percent cream - 250 milliliters;
  • Dried rosemary – a quarter tsp;
  • Salt, pepper - at your own discretion;
  • Olive oil – one tbsp.

Cooking time is an hour.

Number of servings – 4-5.

Step-by-step preparation:

  1. Wash the pink salmon, add salt, pepper and rosemary.
  2. Grease the baking dish thoroughly with oil.
  3. Place the fish on the bottom of the mold.
  4. Boil broccoli in slightly salted water. This will only take a couple of minutes. Then drain the liquid and place the broccoli on the fish.
  5. Pour cream over pink salmon and broccoli. After this, cover the future delicacy with a sheet of foil and place it in an oven preheated to 200 degrees.

After twenty to thirty minutes, the delicious, juicy fish will be ready. It should be served hot.

Baked salmon steaks

Red fish is not baked in advance; it comes to the table straight from the oven. You can do all the preparatory work: fry the mushrooms, grate the cheese and hide it in a closed container, put the fish steaks in the refrigerator.

While the guests are chatting pleasantly over an aperitif, you will have time to instantly pack the fish in foil and put it in the oven. Salmon does not have an irritating “fishy spirit”; baked steaks smell exquisite and tantalize the sense of smell.

Products

  • salmon – 1 kg;
  • champignons – 300 g;
  • cheese – 200 g;
  • lemon – 1 pc.;
  • black peppercorns – ½ tsp;
  • Provençal herbs – 1 tsp;
  • salt – 2/3 tsp;
  • pickled olives.

Recipe

Bake fish with champignons, choose small mushrooms that will look beautiful when sliced. The cheese needs to be neutral in taste so that it does not compete with the salmon. All ingredients are designed to emphasize the special juiciness and tenderness of red fish.

1. The salmon carcass is cut and cleaned, removing the scales with a thin, sharp knife. The fish is washed under running water, the head and tail are cut off, and large dorsal fins are removed. Fish by-products are not thrown away; the fin heads make a delicious fish soup.

2. Cut the carcass into two-centimeter pieces. The cut should be even; you should not cut noble fish with a dull knife. Finished fish steaks should be the same.

3. Mix salt with Provençal herbs, add a few crushed black peppercorns. Rub the pieces with the resulting mixture. Handle salt very carefully; too much will ruin the taste of the dish. Cut off a third of the lemon and sprinkle lemon juice over the fish steaks. Throw the remaining black peas into a bowl.

4. Cover the bowl with cling film and place in the refrigerator for half an hour. Pre-marinating will improve the taste of the dish so much that no hot sauces will be needed when serving.

5. Champignons are cut into thin slices and fried in sunflower oil until golden. The cheese is grated.

6. Prepare a separate package for each steak, cutting the foil into rectangles. If the fish is small, you can pack two steaks at a time in foil.

7. The surface of the steaks is completely covered with fried champignons.

8. Mushrooms are generously sprinkled with cheese. No salt is added.

9. The fish is wrapped in foil. The steaks are placed in an oven preheated to 200 degrees. Bake the fish for 20-25 minutes. When baking, some of the cheese will drip down, revealing the mushroom layer.

10. Place hot steaks on a plate, insert pre-prepared skewers with olives and lemon slices. Warm baked salmon is a luxurious dish for a romantic dinner. The fish is served with light chilled white wine.

The soft cheese and mushroom crust will completely cover the top of the steaks. If you like a crispy-fried crust, bake 10 minutes longer by cutting and unfolding the foil. But such steaks will lose some of their juiciness. Salmon baked with mushrooms does not need a side dish; only fresh vegetables can be its “escort”. Baked steaks can be stored in the refrigerator for 2-3 days. The fish will make a wonderful and satisfying snack that will delight you at work. Cooled salmon will firm up slightly, but the microwave can restore it to its original tenderness.

Let's prepare the necessary ingredients.

Wash the lemon, cut lengthwise, set aside half, grate the zest from the second and squeeze out the juice.

  4. Place fried mushrooms on top of the onions. Lubricate everything with delicious mayonnaise. Sprinkle cheese on top of the dish. Not just a little, but rather a thick layer. If you don't like mayonnaise, use sour cream. But remember that it is higher in calories. You can make a thin, beautiful mayonnaise mesh on the cheese layer or simply sprinkle it with sunflower oil.
  5. Preheat the oven to 180 degrees and place a baking sheet with wonderful fish with vegetables and cheese. Bake for 25 to 30 minutes. An appetizing crust should appear on top. In 3 min. Before it's ready, open the oven door, take out the baking sheet and sprinkle the fish with finely chopped herbs.

You can serve it hot right away or wait until it cools down. Hot or cold, the dish is equally tasty and aromatic.

  2. Place the butter in a frying pan and melt it, then add the onion and let it fry until golden brown.
  3. Now the chopped champignons are placed in the frying pan and also fried, but under the lid. All moisture should be completely removed from them.
  4. At this time, you need to use another frying pan where the flour will be fried. It should be fried until it becomes creamy and has a characteristic nutty smell. After which, cream is poured into it, and everything is quickly mixed so that in the end there is a homogeneous substance.

  2. Butter – 20 gr.

  4. Mushroom broth – 300 gr.
  5. Flour – 40 gr.
