How to make a pie with honey mushrooms

Baking with such aromatic mushrooms turns out really tasty if you follow simple tips and recommendations during its preparation.

  1. The main ingredient can only be used pickled, dried or fried.
  2. The mushrooms themselves are a bit dry, so it is recommended to add additional ingredients to the filling for honey mushroom pies: onions, sour cream, cheese, meat, cabbage.
  3. The fastest way to make pastries is from store-bought puff pastry, but the aspic pie will require a little work.
  4. You can use fried, frozen and boiled mushrooms.
  5. To prevent the cake from burning during baking, you need to adhere to a certain temperature regime. If the cooking time lasts longer than 40 minutes, you will need to place a bowl of water in the oven along with the baking sheet.

Advice! To prevent honey mushrooms from appearing dry, they need to be stewed in a saucepan with a small amount of cream or sour cream.

How to choose the right mushrooms?

Honey mushrooms are one of the most common mushrooms used in cooking. But, like everyone else, you need to be able to choose honey mushrooms, whether in the forest or on store shelves.

After all, spoiled mushrooms can cause the same harm to the body as poisonous ones. You can collect mushrooms in the forest only if you are a mushroom picker with many years of experience, or if you go looking for them with a person in whose competence you are absolutely confident.

When buying, you also need to be confident in the seller. Let's look at the main signs of a quality mushroom. First of all, you need to pay attention to the stem of the mushroom. It should have a “skirt” at the very base. The false mushroom does not have it. Real honey mushrooms have a pronounced mushroom aroma. False, on the contrary, has a putrid, unpleasant odor that smacks of earth.

There are “scales” on the cap of the original honey mushrooms. The cap of the false mushroom is absolutely smooth.

There are also differences in color. In the false mushroom it is pronounced. The inside of their cap is an unhealthy greenish color. While a real mushroom has a muted beige color, and the cap has plates on the inside.

Mushrooms also have characteristic differences in taste, but it is better not to get to this point.

If you decide to buy honey mushrooms in a store or market, pay attention to their general condition. The surface of the mushroom should be without visible damage. They should also be free of dark spots, mold or rot.

Mix flour, soft butter, sugar, salt, egg and dough in the bowl of a food processor and knead until the dough becomes smooth and stops sticking to your hands. Category: Unsweetened pies

Dough:

  • Flour – 2 tbsp.
  • Water – 150 ml
  • Vegetable oil – 30 ml
  • Sugar – 2 tbsp.
  • Salt – 0.5 tsp.
  • Dry yeast – 1 tsp.

Filling:

  • Honey mushrooms – 250 g
  • Potatoes – 4-5 pcs. (400 g)
  • Onion – 1 pc.
  • Salt

Step by step photos of the recipe:

Let's prepare the dough first, as it needs to rise.

Let's check if the yeast is working. Pour slightly warm water into a deep container, add 2 tbsp. flour, yeast, sugar and salt.

Stir the yeast until it is completely dissolved and leave in a warm place for 15-30 minutes, depending on the freshness of the yeast and its activity.

After 15-30 minutes they should start to foam and come up, which means they are working.

Pour in the vegetable oil and add the remaining flour and knead into a soft elastic dough. It should not be very tight, otherwise the baked goods will turn out hard and not airy.

Cover with a lid or film and again leave in a warm place for about 30-45 minutes until it rises and doubles in size.

In the meantime, prepare the filling.

Peel the potatoes, cut into cubes and boil until fully cooked. You can cook it with the addition of 2-3 bay leaves, this will give the filling a special aroma and taste.

Drain all the water and make puree. Be sure to drain all the water so that the filling is not too heavy.

Fry the onion in a frying pan until transparent.

And then add honey mushrooms and fry everything together for another 5 minutes.

If the mushrooms are fresh, then they need to be peeled and boiled, but frozen ones can be immediately placed in the pan without defrosting.

Add to mashed potatoes and stir. Salt to taste, but keep in mind that you need to add a little more salt, since the dough will be practically unsalted.

The dough has already risen and needs to be kneaded.

Divide into two parts so that one is a little larger.

Roll out most of it and place it in a greased baking dish. We form the sides.

And cover the top with the remaining dough, which needs to be rolled out into a layer.

We pinch the edges and make a hole in the middle to allow steam to escape.

If you want to get a beautiful crust, brush the top with egg.

Place in an oven preheated to 180 C and bake for 30-40 minutes until golden brown.

Remove from the oven and let cool for 5 minutes before removing from the pan.

Spice up. Pour in the remaining dough.

Bake in a preheated oven at 200 degrees for 40-50 minutes. Check readiness with a wooden stick/match/toothpick - the dough should not stick to the match.

By the way, this pie can be cooked both in the oven and in a slow cooker.

  • Milk (kefir, water) – 100 ml.
  • Vegetable oil (unflavored) – 2 tbsp. spoons;

At the end add 0.5 teaspoons of salt. The filling is ready!

With salted mushrooms

So, it’s clear with fresh mushrooms, but how to cook if you have salted mushrooms? The essence of the recipes does not change - choose any of the above. Here we just need to add one more point.

Salted (pickled) mushrooms should be pre-washed and infused in clean, cool water. Filled with water, left for 15-30 minutes, washed again - that’s it, you can further process it and put it in the pie.

The point here is to remove excess salt and acids from the mushrooms.

  • Firstly, any mushrooms must first undergo heat treatment (cooking, stewing, frying). This is especially important when fresh wild mushrooms are used.
  • The mushroom filling does not have to be fried in one oil. Someone puts a spoonful of mustard, a little cream, mayonnaise, tomato paste, sour cream here. In general, add any favorite sauces, it will greatly diversify the taste of baked goods.
  • Fresh dill, green onions, cilantro. parsley, garlic - all this will not only have a positive effect on the taste and aroma, but the inside of the pie will be more beautiful and appetizing.
  • No one forbids adding other vegetables besides potatoes: cabbage, zucchini, green beans, stewed carrots, etc.

I advise you to watch a video on the topic.
We are experiencing some kind of mushroom boom this year! I've never seen so many before. The market is simply flooded. All roadsides are lined with mushroom picking cars. And although I have long been indifferent to honey mushrooms, and if I buy mushrooms, then only white ones (which are already packaged in bags in the freezer, for aromatic soup), I could not resist, succumbed to the “general panic” and took several buckets. I boiled some and put it in the freezer, immediately fried some in sour cream, and spent a small part on a pie. I had neither the strength nor the desire to marinate. The pie, or rather it’s not a pie but a tart, is very simple to make, the dough is unleavened, mixed with sour cream, the filling consists of eggs, cheese and mushrooms. But despite all its simplicity, it is very tasty; you can take it with you to work, for a walk, and more as a snack.

For the dough:
- 1.5 tbsp flour, - 100 g butter, - 0.5 tbsp light sour cream, - a pinch of salt and a pinch of sugar, - 1 tsp baking powder.
For the filling:
- 1 kg of honey mushrooms (or 500 g of honey mushrooms, 500 g of champignons), - 3 eggs, - 1 large onion, - 4 tbsp cream 33%, - 150 g of hard cheese (I used tilsitter), - salt, freshly ground pepper, butter and vegetable oil for frying.
Melt and cool the butter. Mix flour, salt, sugar, baking powder. Pour sour cream and butter into the flour mixture and knead into a soft, elastic dough. Place in the refrigerator for an hour. Boil the mushrooms, cool and fry in a mixture of butter and vegetable oil along with onions. If you also use champignons, you do not need to boil them. Lightly beat the eggs with cream (you can use sour cream), add grated cheese and mushrooms. Add salt and pepper to taste and mix well. (You can also add any greens, but my young men don’t like it, so I don’t add it.) Preheat the oven to 170 degrees. Grease a mold with a diameter of 20-22 cm with butter. Roll out the dough into a layer 1-2 cm thick. Place in the mold so that the dough hangs over the sides. Using a rolling pin, cut off any excess dough hanging over it by rolling it along the sides of the pan. Prick the dough with a fork and add the filling. You can sprinkle grated cheese on top if you wish. Bake for 35-40 minutes until lightly browned. Serve chilled.

Such yeast will be appreciated by mushroom lovers. According to this recipe, pies with honey mushrooms and potatoes will be cooked in the oven. If you wish, you can bake the finished pies in a frying pan in sunflower oil. will turn out no less tasty. To prepare the pies, you need to boil the honey mushrooms in advance. It is very good to freeze boiled honey mushrooms for the winter in the freezer. You just have to defrost these mushrooms, and you can always please your family with a delicious mushroom dish, regardless of the time of year.
