First you need to bake thin, tender pancakes. Mix a glass of kefir with a pinch of soda and leave for 12 - 14 minutes. Beat 3-4 eggs with salt, sugar, vanilla. Pour a glass of milk, kefir mixture, beaten eggs into a large container, add flour, knead the dough without lumps. Bake pancakes. You should get 18 - 20 thin, openwork, soft rounds.

How to cook “Pie with mushrooms and meat”
The first step is to prepare the dough, so we put flour and butter into the bowl of the food processor, add a pinch of salt and grind everything until crumbly.
Break one egg into the resulting mass.
Knead soft and elastic dough.
Place the finished dough in a springform pan and spread it along the bottom with your fingers, making small sides out of the dough. Place the pan with the dough in the refrigerator for half an hour.

Products you will need:
- 200 ml. milk;

- 20 g margarine;
- 350 g flour;
- 2 tsp. sugar sand;
- 1 tsp. salt;
- 2 – 3 tbsp. l. vegetable oil;

You need to mix like this:
- combine slightly warmed milk with melted margarine;
- add yeast, salt, sugar and a small amount of flour, then put the dough in a warm place for half an hour;
- add butter, egg and remaining flour to the risen dough;
- knead into a thick elastic dough and, covering with a damp towel, leave to rise in a warm place for a couple of hours.
Sand
You will need for cooking:
- 400 – 450 g flour;
- a pack of margarine;
- a little baking powder for dough;
- 100 ml. kefir
Grind the hard margarine with a knife or using a grater and mix with the remaining ingredients. Knead the resulting mass until it becomes elastic and stops sticking to your hands. After this, divide the dough into 2 parts, wrap in cling film and place in the refrigerator for 30 minutes.
The fact that there are no eggs among the ingredients allows this recipe to be used by those who are fasting. Using this recipe, you can make a Lenten pie with mushrooms by simply removing the meat from the filling.
Fast (filled)
A quick meat pie with mushrooms takes minimal preparation time due to the fact that after mixing all the dough components, it can be baked immediately.
Have to take:
- 200 - 250 g flour;
- 3 tbsp. l. mayonnaise or sour cream;
- 4 eggs;
- a teaspoon of apple cider vinegar;
- 0.5 tsp. soda;
- 100 g hard cheese.
The dough is prepared like this:
Beat the eggs with a mixer, and with continuous stirring, add soda slaked with vinegar, sour cream and grated cheese. The flour is added last. You need to make sure that the dough is not thick; the consistency should be similar to that used for charlotte or pancakes.

Routing:
- Make the filling in advance. Peel the potato tubers and boil until tender. Then puree.
- Defrost the minced meat, or grind the meat yourself. Chop the onion, add it to the mince, salt and pepper it. Mix well. If you like lots of seasonings, add to your taste.
- Heat the oil in a frying pan, add the minced meat. Fry, stirring continuously to break the piece into small fractions. When the meat is completely cooked, turn off the burner and cool the filling.
- Pour kefir into the bowl, add soda (there is no need to extinguish it, the fermented milk drink will do it itself). Leave it alone for a quarter of an hour.

- Add flour in several additions. Make a fairly thick batch. The mass will be quite liquid.
- Grease a heat-resistant pan (bottom and sides). Lay out most of the dough.
- Spread mashed potatoes on top. Then meat. Cover with the remaining dough, making sure to even it out.
- Bake at 180 o C in the oven, setting the timer for 40 minutes. Just before the timer beeps, brush the top of the pie with yolk. Return to the oven until nicely browned.

250 ml kefir, 2.5 cups flour, 8 g dry yeast, 1 tbsp.
l. sugar, 2 tsp. sea salt, 2 tbsp. l. butter, 0.5 kg minced meat, 1 onion. Preparation:
Mix heated kefir with salt, butter, sugar, yeast and flour, knead the dough. Fry the minced meat with onions in a frying pan, season with spices, and grind in a blender. Roll out half of the dough thinly, place it in a mold, forming sides, spread the filling, cover with the second flatbread, bake until done.
Cooking technology
At the initial stage, you need to deal with the meat. Pre-washed beef is placed in a pan of cold water and boiled until cooked. While the meat is boiling, you can pay attention to the vegetables. They are washed, peeled and crushed. Champignons, carrots, celery and onions are cut into medium pieces, the garlic is passed through a press.
After this, place a deep frying pan greased with vegetable oil on the stove. When it is hot enough, add garlic and onions. After a few minutes, add tomato sauce, remaining vegetables and diced boiled meat. All this is salted, peppered and seasoned with spices.
