Oyster mushrooms are special mushrooms. They are tasty, light, quick to prepare, and go perfectly with most foods - sour cream and herbs, potatoes, cabbage, tomatoes. In terms of protein and amino acid content, it is the third product after legumes and meat. Moreover, its beneficial properties (by the way, about the acid-base balance) increase when heated.

In a word - useful, and therefore loved by many. True, they are often prepared with a side dish, and not as a filling for baked goods. But this omission can be corrected. Just choose the oyster mushroom pie you like best and try it.

A simple recipe for oyster mushroom pie on ready-made puff pastry

When time is short and the family is already knocking their forks on the table in anticipation of a delicious dinner, you can use this simple recipe. Preparation will take no more than 40 minutes, and the filling can be varied with whatever is in the refrigerator.

We will need

  • Yeast-free puff pastry (0.5 kg);
  • 350 g oyster mushrooms;
  • large onion;
  • 200 g sour cream (fat content – ​​15–21%);
  • 150 g hard cheese;
  • 2 tbsp. spoons of vegetable oil;
  • salt to taste (if there are no children among the eaters, you can add a mixture of peppers).

In addition to mushrooms, you can add peas, tomatoes, young cabbage, beet tops, any greens, and puree.

How to cook

The dough must be removed from the refrigerator in advance. Half an hour before it is ready, you can start preparing the mushroom filling for oyster mushroom pies. For this:

  1. Peel the onion and cut into cubes.
  2. Cut the mushrooms into large pieces.
  3. Heat a dry frying pan, add oil and fry the onion for 2 minutes, and then oyster mushrooms for 15 minutes.
  4. 5 minutes before the mushrooms are ready, add sour cream, salt and season, after which the heat should be reduced slightly.

  1. Place the defrosted dough on a flat baking sheet or in a rectangular shape. Leave no more than 10 cm on each side for the sides.
  2. Before laying out the filling, we make several punctures throughout the entire area of ​​the dough. Then we place mushrooms with onions and sour cream in the center, form sides from the free “allowances” of dough along the edges and fill the open area with grated cheese.
  1. Prepare an open puff pastry pie for 30 minutes at a temperature of 170–180 degrees (no longer needed). If you have nothing to measure the temperature in the oven, you should monitor it so as not to dry it out (as soon as it browns, take it out).

How to cook

The most aromatic baked goods are obtained if wild mushrooms are used for the filling, but champignons or oyster mushrooms are also perfect. The aroma will not be as pronounced, but the taste will not suffer at all.

Pie dough can be made with yeast or baking powder. Baking made from puff pastry is very tasty. You can also bake crumbly shortbread cake. It’s easy to make jellied pies from batter that is poured onto the prepared filling. Another interesting option is potato dough, it is prepared with or without yeast.

To prepare the filling, mushrooms need to be sorted, washed and chopped.

  • If you choose champignons or oyster mushrooms , then just lightly fry them in a frying pan with butter.
  • Wild mushrooms must be boiled first and then fried.
  • Dry mushrooms will take the longest to prepare. It is recommended to soak them for several hours in lightly salted water or milk, and then boil them. Only salted or pickled mushrooms do not require preparation; you just need to chop them.

But you can put potatoes in the filling, both raw and cooked. If you decide to add raw potatoes, boil them a little (dip the slices in boiling water for five minutes and drain in a colander). And be sure to add oil to the filling, otherwise the potatoes will crunch.

Advice! To reduce baking time, fried or boiled potatoes are often added to the filling. In the latter case, the finished potatoes can be cut or mashed into puree.

Very often, onions and herbs are added to the potato and mushroom filling, as well as various spices. Other products such as vegetables and cheese are also used as additives. But pies turn out to be especially satisfying when meat products are added to potatoes and mushrooms. It can be boiled meat, fried minced meat or pieces of ham, sausage, or frankfurters.

Pies are made closed, when the filling is located between two layers of dough, or open. In the latter case, the filling is laid on top of a layer of dough and, often, sprinkled with cheese.

Interesting facts: Some pies are preserved as a historical relic. Thus, the oldest piece of the pie was sold at Christie's auction. At the time of sale, the “age” of the pie was 140 years old; it was baked for the wedding of Queen Victoria.

Recipe for pie with oyster mushrooms and potatoes made from yeast dough

If you have time and want something original, be sure to try baking with oyster mushrooms and potatoes in the oven using yeast dough. You can take it ready-made, but it’s better to cook it yourself.

We will need:

  • 2 cups of flour;
  • 0.5 cups of boiled water;
  • 1 teaspoon dry yeast;
  • 3 tbsp. spoons of vegetable oil;
  • 2 teaspoons sugar;
  • 1 teaspoon salt.

Pour the yeast into the water and immediately add sugar, stir and leave for 15 minutes until the yeast dissolves.

After a quarter of an hour, pour the yeast mixture in a thin stream into the flour mixed with salt and add the butter. That's it, you can knead the dough (it should be elastic and soft, but not sticky) and leave it to rise for 1.5 hours in a warm place.

How to cook

While the dough is rising, make the filling. For it you will need:

  • 1 carrot;
  • 2 onions;
  • 0.5 kg oyster mushrooms;
  • 0.5 kg of potatoes.
  1. We clean and wash the root vegetables.
  2. Oyster mushrooms can be boiled for 5 minutes in salted water and left to cool.
  3. Cut the onion into cubes and fry with grated carrots for 5 minutes. Cut the cooled mushrooms into large pieces and add to the frying (simmer all together for another 10 minutes).
  4. Boil the potatoes until tender and mash them into a puree with a small amount of broth. Divide the mushroom mixture in half - mix one part with the potatoes, leave the other in a separate bowl.

  1. From the suitable dough we form two unequal balls in a proportion of approximately 30:70. The main part of the dough will be used for the crust - the ball must be kneaded in the mold, trying to achieve a uniform thickness over the entire surface.
  2. We spread the potato-mushroom mixture on it, and on top - separately mushrooms with onion and carrot frying.
  3. From the remaining dough you can make strips, braids, mesh (whatever you like best) and cover the filling.

  1. Also roll out the layer and “cover” the vegetable filling of the workpiece. Pinch the edges well.

  1. Bake at 180 degrees for 35 minutes.

Preparation

  1. First, knead the yeast dough. Add dry yeast, sugar and salt, an egg to the sifted flour, pour in warm milk (not hot!). Knead the dough. At the end of kneading, add melted butter. If necessary, add a little flour. The dough should be soft and hold its shape well.
  2. Leave the dough in a sealed container in a warm place for two hours. Prepare the filling. Oyster mushrooms are cut into small pieces. Fry together with onions in oil, adding salt and pepper. Potatoes are washed and boiled in their jackets. Boiled warm potatoes are peeled and mashed with a spoon of butter, salted to taste. Grated hard cheese is added to the resulting mashed potatoes. Do not mix mushroom and potato fillings!
  3. The dough is rolled out into a sausage shape, cut into portions and formed into flat cakes. Each flatbread is topped with potato filling first, then mushroom filling. The pies are pinched and placed on a greased baking sheet. Leave to proof, covered with a napkin for 15 minutes.
  4. Before putting the pies in a hot oven, brush them with yolk. Bake at 200 degrees for about 25 minutes. When the pies are ready, they can be greased with butter, cool slightly under a clean napkin and served.

When the yeast is dissolved in milk, the dough is light and airy. By replacing milk with water, you can get a more modest result, and the taste will become slightly bland.

Warm milk is poured into a deep bowl, crumbled yeast and sugar are added. Stir until the yeast and sugar dissolve, leave in a warm room for 10-15 minutes.

Add eggs, sunflower oil and salt. When homemade eggs with bright yolks are used, baked goods take on a beautiful creamy color.

Beat the mixture with a whisk at medium speed until light foam appears. You can use a regular fork to beat.

Sift the flour and knead the dough for the pies.

Form a ball from the dough, cover the bowl with a towel, and put it in a warm place for 1 hour.

If the room is cool, you can place the dough near the gas burner that is on.

Wash the oyster mushrooms and boil for 10 minutes.

Then cut, the pieces can be small and medium.

The onion is fried in sunflower oil until half cooked. Add oyster mushrooms and salt, stir the mass. The filling is fried until a light golden hue appears.

Sprinkle the filling with ground black pepper and stir. When the dough rises above the sides of the bowl, take it out and place it on a cutting board.

The large ball is divided into small balls.

Roll out the flatbreads and put mushroom filling on each flatbread.

They make pies; they can be of any shape: triangles, an elongated rectangular “boat” or traditional elongated ovals.

Oyster mushroom pies should “rise” for 10 minutes; you can leave them on a cutting board or transfer them to a baking sheet.

The egg yolk is mixed with one tablespoon of cold milk, and the pies are greased with this “glaze”. Then sprinkle them with flax seeds, drawing stripes in the center or outlining the contours.

According to the recipe, oyster mushroom pies are placed in the oven preheated to 180 degrees. Baking time - 35-40 minutes. The baked goods can be served immediately. Hot pies with oyster mushrooms will fly away instantly.

If you plan to serve the baked goods after some time, then the pies should cool under a towel to maintain softness.

The oyster mushroom pies turned out very tasty! I was especially pleased that the dough was purchased and making pies from it was easy and quick! I baked these puff pastries just in time for the wedding of Prince William and Kate Middleton, and the whole family watched the wedding over tea and delicious mushroom pastries!

Puff pastry can be rolled in any way you like - into tubes, pyramids, envelopes, and triangles, and into boats made from the dough - recipe for boats with champignons and boats with cottage cheese. This simple store-bought dough can even be cut into strips, coated with egg and sprinkled with sugar - and you will have excellent, tasty tongues!

I made triangle puffs and strip puffs with oyster mushrooms. These pies of different shapes with the same filling taste differently. Puff triangles will appeal to those who like contrasts: crunch (almost like chips) and suddenly reveal a juicy filling, and stripes will appeal to those who like halftones: delicate oiled dough, softly crumbles under your bite and you immediately fall into the mushroom pulp. I liked the second option better.

If you have small children, sour milk probably happens from time to time. Don’t rush to get rid of such a useful product, because there is an original baking recipe in which it will come in handy. Cooking will take an hour.

We will need:

For the test:

  • Wheat flour - 260-300 g;
  • 2 eggs;
  • 1 glass of sour milk (if not, matsoni will do);
  • 1 teaspoon of soda, salt.

For filling:

  • 0.3–0.5 kg oyster mushrooms;
  • onion;
  • 5–6 tbsp. spoons of vegetable oil.

How to cook

For the dough, mix eggs with milk (yogurt) and salt. Add a spoonful of soda and gradually add flour. There is no need to actively mix - the dough should be saturated with carbon dioxide. After kneading, it should be allowed to stand for 15–20 minutes.

Meanwhile, let's make the filling:

  1. Boil the mushrooms in salted water for 5–7 minutes.
  2. Cut the onion (as convenient) and fry for 3 minutes in hot oil;
  3. Add the cooked mushrooms to the onion, without reducing the heat, and brown for 5 minutes.
  4. Divide the finished dough into 4 equal parts. Roll each into a ball and then roll out into a cake. Place a quarter of the mushroom filling on one half of the layer, cover with the other half, pinch the edges well, making punctures.

  1. So we form 4 blanks. Place them two at a time in a frying pan and place over medium heat.
  2. As soon as the bottom part is browned, turn it over and fry the other side.

  1. Fry each side in vegetable oil for 5′.

Ingredients for 16-18 pies:

To prepare yeast dough:

  • premium baking flour – 500-550 g
  • dry mix Dr. Oetker – 1 sachet
  • fresh chicken egg – 1 pc. large
  • softened butter – 60 g
  • milk with fat content 1-3.5%, warm – 200 ml
  • white granulated sugar – 30-60 g
  • coarse salt - a pinch.

For filling:

  • oyster mushrooms or other fresh mushrooms – 350 g
  • potatoes - 3-4 medium-sized tubers
  • onion – 1 pc.
  • hard cheese – 50 g
  • butter – 30 g
  • sunflower oil for frying
  • salt + ground pepper – a pinch.

Lenten pie with oyster mushrooms in the oven

The bright holiday of Easter has already passed, but for the future (and for those who have planned a detox program for the summer), the recipe for a quick Lenten pie with mushrooms will be very useful. It is prepared on puff pastry (you can buy it) with pea flour filling.

We will need:

  • 250 g ready-made puff pastry;
  • 300 g oyster mushrooms;
  • 5 g ground garlic;
  • 1 cup pea flour;
  • 10 g of greens (onion, parsley, cilantro, dill - to choose from or a mix);
  • onion;
  • 250 ml boiled water;
  • salt pepper.

How to cook

  1. Thaw the dough and place it on a baking sheet greased with margarine.
  2. Peel the onion, wash it, cut it into cubes and fry.
  3. Finely chop the mushrooms and add to the onion frying for 10–12 minutes. Cool the filling slightly and transfer it to the dough.

For filling:

  1. Mix flour and salt;
  2. Add ground garlic;
  3. Pour water in a thin stream (the amount depends on the quality of the flour, so the volume given in the recipe may be excessive, here you need to look at the consistency of the pouring, it should turn out thick);

  1. Add finely chopped greens and mix everything well.
  2. Pour in the filling, heat the oven and place the pie in it for 20 minutes.
  3. It is very important to control the temperature (no more than 190 degrees) so as not to dry out the dish. After 20 minutes, serve the oyster mushroom pie.

30 minutes before guests

Unexpected relatives decided to pay a visit, the husband suddenly came with his old friends from the university, the strict mother-in-law decided to pay a courtesy visit? Don't panic. The nearest supermarket will help solve some of the problems, and the rest is up to skillful hands and imagination. To prepare a simple upside-down pie with mushrooms, you will need a minimum of effort, a package of champignons, a few potatoes, a little cheese, onions, and butter. Cooking quickly:

  • slice the mushrooms thinly, fry with onions until golden brown, at the end of frying, add plenty of salt and sprinkle with spices;
  • While the onions are frying, boil a few potatoes in their jackets, or cut into cubes;
  • make the batter: 2 – 4 eggs, a glass of kefir, a package of baking powder, flour. You should get a soft mass with a thick consistency;
  • The bottom of the mold must be covered with paper soaked in oil, a layer of mushroom filling and a layer of cheese are placed, everything is compacted tightly. Then the potatoes are grated, salted, peppered, and greased with mayonnaise;
  • The dough is carefully poured, everything goes into the oven, the pie will be ready in 30 minutes.

When taking out the resulting masterpiece, you need to carefully turn the mold over onto a large dish, remove the oiled paper, sprinkle with parsley, onions, in a word, decorate the prepared miracle.
The second version of the mushroom changeling includes the following ingredients and is prepared as follows:

  1. Products are prepared: pickled champignons, half a glass of round rice, boiled potatoes and carrots, onions, a can of green peas.
  2. The dough is the same as in the first recipe.
  3. Boil the rice, cool, mix with peas, sprinkle with allspice, dried dill, and cumin.
  4. Mushrooms are placed in dense layers on an oiled pan. Next, cheese, boiled potatoes, mushrooms, pickled onions, rice, carrots, and potatoes are laid out in layers. Pour all the splendor into the dough.
  5. To prevent the pyramid from falling apart, all layers are smeared with mayonnaise and compacted tightly by hand. You can put a little cheese on each layer: under the influence of high temperatures it will hold all the ingredients together.
  6. After baking in the oven, turn the pie onto a wide dish and invite guests to the table.

Changelings are prepared with a variety of fillings. The main product in them is cheese, which helps to maintain the unusual shape of the dish. Soft varieties will harmonize perfectly with heavy vegetables (such as potatoes), rice, and beans.
