Zrazy with minced mushrooms in a frying pan is prepared in the following way:
- The first step is to prepare the chicken meat. It will need to be washed well under running water and cut into large pieces. The onion must be peeled and cut into 4 equal parts. The garlic will also need to be peeled. Pour milk over the bread slices, let them absorb the liquid a little, and then squeeze the milk out of the bread with your hands.
- Next, you will need to install a small attachment on the meat grinder and pass the meat with onions, garlic and squeezed bread through it. You need to break 2 eggs into the final minced meat and mix the components thoroughly until a single mass is formed.
- Now you need to make the filling. The champignons can be washed in cold water, cut into small pieces and placed in a frying pan with heated sunflower oil. - To begin with, you can peel the onion and finely chop it into cubes. The chanterelles should be washed to remove all dirt and finely chopped. Now you can heat the frying pan, pour in sunflower oil and lay out the chopped ingredients. Mushrooms and onions should be fried until the chanterelles give up moisture and the onions become golden.
- Next, you need to fill the saucepan with water and put 2 eggs in it. Place the saucepan on the stove and cook the eggs for 10 - 13 minutes. from the moment the water boils. Boiled eggs need to be cooled by filling them with cold water, then peeled and finely chopped with a knife.
- Now in a bowl you can put the onion and mushroom frying, an egg, pre-chopped dill and parsley, add 1/4 tsp. ground pepper with table salt and mix the ingredients well.

Then prepare minced meat for future meat preparations. Mix the meat (pork and beef) twisted in a meat grinder. Add 1 egg and bread soaked in milk. Add salt and pepper to taste, mix well.
From the minced meat we have prepared, it is necessary to form a medium cake, approximately 10 by 10 cm in size or a little less, about one and a half cm thick. Place 1 tablespoon of the onion-mushroom filling prepared in advance in the center of the meat cake.

Zrazy with minced mushrooms in a frying pan can be prepared as follows:
- First, you can put 2 eggs in a saucepan, fill them with water and send them to cook on the stove. In 10 minutes. After the water boils, the eggs will be cooked and will need to be poured with cold water so that they cool faster.
- In the meantime, you can peel the onion and chop it into small cubes.
- The champignons need to be washed under running water and cut into large cubes; during the frying process they will lose half of their volume. Pour 30 ml of sunflower oil into a heated frying pan, add onion and fry it for 2 - 3 minutes. until transparent. Now you can add the mushrooms to the onions and fry the components until all the liquid has evaporated for 10 minutes at low heat.
- Next, you can peel the boiled eggs, cut them into small pieces, add onion and mushroom frying, sprinkle with a little salt and carefully mix the ingredients.
- Then the slices of bread need to be poured with milk for 2 minutes. You will need to place the minced pork in a deep bowl, add a raw egg, slices of bread without crusts squeezed out of excess milk, add the remaining salt and pepper and mix the minced meat well until a homogeneous mixture is obtained.
- Then you need to form a round cake from part of the minced meat, place a portion of the filling in the center and wrap the cake so that the filling is inside. This way you will need to make all the zrazy and roll them in flour.
- Next, you need to put the zrazy on a hot frying pan, pouring the remaining sunflower oil into it. Zrazy should be fried on medium heat for about 3 minutes, then turn them over and continue to fry for another 3 - 4 minutes. After this, you need to carefully pour a small amount of water into the pan, close the lid and simmer the zrazy for 5 - 7 minutes. - First you need to pour the buckwheat onto a sieve and rinse it with running water.
- Then it should be poured into a saucepan, pour in water in a ratio of 1:2 and put on fire. You will need to cook the cereal until the moisture has completely evaporated for 20 minutes. Ready buckwheat needs to be cooled.
- While the cereal is cooling, you can peel the onion and chop it into small cubes. The cubes can be placed in a frying pan heated with sunflower oil and fry until transparent, then add the boiled champignons cut into small pieces and continue frying for at least another 5 minutes.

- After frying the zrazy, you need to transfer it to the remaining onion and mushroom frying, pour in the cream and broth, and put the container on the fire. After the liquid boils, turn down the heat and simmer the zrazy in the creamy sauce until thickened. This will take about 10 minutes.
Before serving, zrazy should be sprinkled with dill.

- You need to pour oil into the frying pan and send it to heat up. Peel the onion, remove the husk, place it on a kitchen board and chop into cubes. You will need to add the onion to a frying pan heated with oil and fry until golden.
- Then the mushrooms should be rinsed under water, dried using paper towels, finely chopped on a cutting board, poured into a frying pan with the onions, stirred and cooked over moderate heat for several minutes. After 5-7 minutes. you can add a little salt and pepper.
- Place slices of bread in a bowl, pour milk over them and leave for at least 15 minutes. You need to transfer the minced meat into another container, add a raw chicken egg to it and mix. - You will need to place minced pork in a large container, put a loaf of bread in it, previously soaked in water and squeezed out, add peeled and chopped garlic and mix well.
- You need to remove the peel from the onion, chop it on a grater with large holes, add it to the minced meat, add a little table salt and black pepper and mix well.
- After this, you should beat the minced meat, cover it with cling film and place it in the refrigerator for 2 hours. Rinse the mushrooms in water, cut them into cubes, peel the remaining onion, chop it with a kitchen knife, put it in a saucepan, fry for 2 minutes, add the mushrooms and simmer until the moisture evaporates, add wheat flour, stir and cook until golden, stirring.

14. Fry the zrazy in vegetable oil, seam side down first.

Zrazy from mixed minced meat with mushroom filling
Another classic filling is mushrooms fried with onions. The juicy filling imbues the minced meat with the forest spirit and the dish turns out to be very satisfying and incredibly appetizing.
Not only fresh champignons are suitable, but also any other thawed mushrooms. The main thing is that they give an amazing aroma.
We will need:
- Minced pork and beef – 750 gr.
- Mushrooms – 250 gr.
- Egg, onion - 2 pcs.
- Sunflower oil – 3 tbsp. l. + 0.5-0.7 cups.
- Breadcrumbs - 4-5 tbsp. l.
- Ground black pepper, salt - to taste.
Preparation:
1. Peel both large onions and set one aside for now. Chop the second one in the form of small cubes and immediately sauté in a frying pan with heated oil (3 tablespoons).
2. Quickly chop the mushrooms and fry them with the onions, which have become translucent by this time. Once the excess moisture has evaporated from the slices, you can add salt and a pinch of ground pepper. After a couple of minutes, turn off the heat and set the roast aside to cool.
3. The time has come to deal with the meat base right away. Pass the set aside onion through the large mesh of a grater. Add this slightly caustic mass to the minced meat with a fresh egg, add salt, season with freshly ground pepper and roll thoroughly by hand.
4. Form a flat cake from the plastic cutlet mass and place the filling in it.
5. Then form beautiful oblong cutlets of the same shape. You can even cool them in the freezer for 15 minutes so that they are less pliable in your hands and easier to “dress” in breading.

Mushroom zrazy will win the hearts of your guests even more if, in addition to them, you add thin plastic cucumbers. It will perfectly highlight the taste of a hot dish and add a touch of freshness.
Meat zrazy with egg filling and cheese baked in the oven
Cheese lovers will be captivated by zrazy stuffed with crushed eggs and cheese shavings. Once melted, the filler will completely combine and when hot, you can even get a pleasant stretchy string from the core of the “surprise cutlet.”
It is advisable to make minced meat mixed, combining, for example, beef with chicken. By adding a fermented milk product such as fermented baked milk, kefir or sour cream, you can achieve greater tenderness of the meat shell.
And so that it does not absorb oil, it is best not to fry the cutlets, but to bake them in the oven. Then you won't need any breading.
We will need:
- Minced pork + beef – 600 gr.
- Minced chicken – 200 gr.
- Cheese – 150 gr.
- Onions, stale wheat bread crumb - 100 g each.
- Milk – 100 ml.
- Kefir – 50 ml.
- Boiled egg – 3 pcs.
- Raw egg – 1 pc.
- Sunflower oil – 1 tbsp. l.
- Favorite spices for meat, salt, ground pepper - to taste.
Preparation:
1. It is better to take bread crumb from yesterday's bread. Tear it into pieces and soak for 10 minutes in milk.
During this time, it is advisable to twist the minced chicken and pork and beef again so that it becomes more delicate in consistency. If you are confident in its quality (for example, you twisted it yourself), then it is not necessary to do this.
Squeeze out the bread and pass it together with the onion through a fine grinder. Add the egg and pour in the kefir. Season with pepper, salt and a pinch of your favorite spices. Mix the resulting mixture well.
If you like the bright flavor of fried onions, you can chop them and first fry them until golden brown, and then send them for thorough chopping with other ingredients.
2. Using a large-mesh grater, crumble the boiled eggs into oblong strips. Do the same with a piece of hard cheese. Mix both of these chips thoroughly with each other.
3. As in the previous recipe, form meat cakes and place a couple of spoons of cheese and egg filling in the center of each. Carefully join the edges and shape into a pot-bellied cutlet.
4. Next, you can begin baking for forty minutes in the oven at 180 degrees. You can only do this in one of two ways.
In the first case, take a cast-iron frying pan and grease it well with oil, and then place the workpieces in it. Add about a third of a glass of water and place in the oven. This way they won’t dry out and will be very juicy.
In the second case, line the baking sheet with cooking paper and place the zrazy on it. There is no need to lubricate them with anything. Place in the oven as is.
They have enough internal juices to remain juicy. However, with this method of cooking, the top will still be slightly dry. To avoid this, it is best to simmer for the first 20 minutes under a sheet of foil and then remove it.
Any side dish goes well with this meat dish: from mashed potatoes to fresh sliced vegetables.
Recipe for potato zrazas with meat
Kitchen utensils: a large saucepan, a measuring cup and a kitchen scale, a sharp knife, containers of different depths and sizes, a wooden cutting board, a masher, a frying pan, preferably with a non-stick coating, a paper towel or napkins, a long wooden spatula with a thin edge.

- Place the washed whole potatoes in a deep pan and fill them completely with water, salt according to your own taste preferences.
- Cook the product until completely cooked.
- Drain the water and add 20-30 g of butter to the potatoes.
- Using a potato masher, mash the potatoes into a puree.
- Pepper the resulting mass and add salt if necessary.
- Stir the puree again and set it aside to cool.
Let's prepare the filling
- Peel the onion and chop it into thin quarters.
- Heat the frying pan, pour 20-25 ml of vegetable oil into it. Pour the chopped onion into hot oil and fry it until cooked, which is determined by the appearance of a golden hue and transparency.
- Place 260-300 g of any minced meat on top of the fried onions.
- Thoroughly stir the meat with the onion and fry the mixture thoroughly, but do not forget to stir it from time to time.
- Season the filling with salt and pepper according to your own taste. When the meat is ready, remove the pan from the heat and set aside to allow the filling to cool.
Let's prepare the dough
- Break one egg into a bowl of cooled mashed potatoes, add 2 pinches of nutmeg and 60-65 g of flour.
- By hand, thoroughly mix the ingredients together, kneading a soft, homogeneous dough.
If the mass falls apart and does not come together well, then add another egg.

- Lightly moisten your hands with vegetable oil. We take a small amount of potato dough, form it into a ball, from which we make a flat cake.
- Place the filling in the center of the flatbread and carefully wrap it in the dough, connecting the edges.
