- aroma. Fresh champignons have a pleasant smell;
- no signs of worminess. If you see places where worms develop on fruiting bodies, then they cannot be used for cooking.
Preparation of champignons consists of several stages. First you need to clean them of peel and dirt. After this, soak in saline solution (2 tablespoons per 3 liters of water). You need to soak the mushrooms for no more than 2 hours. Drain the fruiting bodies in a colander to drain excess liquid. After careful selection and preparation of mushrooms, they can be frozen or canned. This way you will increase their shelf life and can use them at any time.

- Soak the onions in cold water (to reduce the volatility of enzymes that irritate the mucous membrane of the eyes) and chop as finely as possible.
- First cut the champignons into halves, and then cut each half into thin slices.
- Pour 1/2 part of the vegetable oil into a preheated frying pan, sauté the onions until a pleasant golden color (or until brown - it all depends on your preference).
- Transfer the prepared onion to any clean bowl and pour the remaining oil onto the surface of the frying pan. Place the chopped champignons in a frying pan and fry them over medium heat until tender.
- While the champignons are cooling, take care of the eggs: peel and cut into cubes with a knife or using a special device.
- Cool the hard cheese a little and grate on the fine side of a grater.
- Now let's start assembling our salad. Place pieces of boiled chicken fillet on the bottom of a large dish.
