Selection and preparation of ingredients

The taste of the finished dish depends on the quality of its ingredients, so you should not put products that are approaching the end of their shelf life, as well as ingredients with an uncharacteristic odor, into the salad. All vegetables should be washed and processed: sweet peppers should be cleared of seeds, and cucumbers that have bitterness should be peeled.

Before using eggs, their shells should be washed with soap and the top layer of leaves should be removed from the cabbage. When working with onions, soak the knife in cold water to prevent tearing. Vegetables, meat, fruits and mushrooms themselves must be fresh, without signs of mold or rot.

Important! Incorrect preservation technology and violation of storage conditions can lead to the development of botulinum bacteria in pickled mushrooms, leading to acute poisoning. Signs of such a product may be darkened brine, a pungent odor upon opening, or a swollen lid. Such preservation must be disposed of immediately.

Salad with pickled champignons and fresh cucumbers

Available ingredients and their small quantities are a definite plus of this dish. For many, the absence of mayonnaise in the salad will also be important.

  • Marinated champignons – 300 g
  • Canned corn - 1 can
  • Fresh cucumbers - 1 pc.

Preparation:

Wash the mushrooms. Place them with the stem up and cut lengthwise to create sections of the entire mushroom.

Peel the cucumber, or leave the skin on if it is thin, and cut into half rings.

Remove the corn and place it in a salad bowl with the rest of the ingredients. Finely chop the greens, mix all the products with oil, add salt.

Fresh cucumbers tend to release juice. To prevent the salad from floating in it, grate the cucumber, sprinkle with salt and let the juice drain. Then add to the salad.

  • 300 gr. pickled mushrooms;
  • 250 gr. canned corn;
  • 4 eggs;
  • 100 gr. rice (it is better to take steamed);

First of all, rinse the rice, add water so that it covers the rice by at least 4 fingers and place it on the stove. As soon as it boils, add salt and reduce the heat. Boil until done. Drain the rice water through a colander and rinse it with cold water. Let the cereal cool completely.

Set the water to boil and place the washed meat in the boiling water. Bring to a boil, skim off the foam and greatly reduce the heat. The cooking time depends on the quality of the meat. Young beef is cooked for about 40 minutes; if the meat was frozen or taken from an old animal, it will take 1-1.5 hours. Add salt at the end of cooking, then you can add allspice and bay leaves.

Advice! If desired, instead of mayonnaise, you can use any other sauce to dress the salad.

Cut the cold boiled beef into small cubes. We cut pickled mushrooms and hard cheese into the same cubes. Cut the boiled eggs in half, then in half again lengthwise, then chop crosswise into thin slices.

1. First of all, you need to boil the chicken and eggs. We wash the ingredients well and put each in its own pan.

Boil the eggs until hard-boiled – about 8-10 minutes.

It is better to take chicken breast fillet, boil until cooked. After the water boils, a film forms on the surface, remove it with a slotted spoon, then add a little salt to the broth.

2. Wash the mushrooms well to remove debris, clean the cap and cut into small pieces. DO NOT be shallow!

3. Now you need to prepare the onions. Clean, chop finely and place in a hot frying pan. Fry it until soft and add a pinch of salt and black pepper. Add mushrooms to the prepared onions and fry for 10 minutes until all the water has evaporated. Cool.

4. Gather the ingredients. Place cooled champignons and onions in a deep salad bowl.

Lay out the next layer of chopped boiled chicken and lightly grease it with mayonnaise, you can make a mesh of sauce.

The third layer is finely chopped egg whites; I prefer to grate them on the small holes of a grater. I add more sauce to this layer, as well as lettuce around the edges.

And now it’s the turn of the pineapples! To begin with, I chop them up a little.

In this case, the salad will also turn out very tasty and interesting in appearance.

Ingredients:

  • Chicken meat - 120 g.
  • A couple of potato tubers.
  • One fresh cucumber.
  • Champignons - 4-5 pcs.
  • Shredded cheese - 2 tbsp. l.
  • Mayonnaise sauce - 3 tsp.
  • Sunflower oil - for frying.
  • A bunch of greenery.

Preparation:

1. Peel the root vegetable and boil until tender. Then grate and place in a serving ring. If you don’t have such a device, you can make a mold out of foil or take part from a muffin pan.

2. Be sure to apply mayonnaise after each layer, it will allow the salad to be more tasty and not dry. Boil or bake the chicken - this should be done in advance to save cooking time. Place the chopped meat in a second layer and cover with mayonnaise.

3. Instead of champignons, you can also use wild mushrooms. A very interesting salad taste is obtained if you choose porcini mushrooms or chanterelles. The mushrooms must be fried for three to five minutes, then cooled and placed in a mold. Don't forget to coat with mayonnaise.

4. Remove the skin from a fresh cucumber - it is quite tough and most often tastes bitter. Chop the vegetable into small cubes and spread over the mushroom layer.

  • Porcini mushrooms – 150 gr.
  • Bulb.
  • Cheese – 100 gr.
  • Sour cream – 2 large spoons.
  • Ready mustard - teaspoon.

  • Salt, bay leaf.
  • Lingonberries, fresh berries - for decoration.

Step by step recipe:

Rinse the breast, boil in a saucepan, adding a couple of bay leaves and salt. Approximate cooking time is 20-25 minutes. Remove meat from broth and cool.

Cut the cooled chicken into medium cubes. Place in a salad bowl.

Chop the porcini mushrooms in the same way and add to the meat.

Chop the onion.

Chop the dill and parsley into fine crumbs.

Prepare the dressing for the appetizer. To do this, mix sour cream and mustard in a bowl and carefully grind the mixture.

Cooking rules

Any pickled mushrooms are great for making salads. But the most accessible, and therefore the most popular, are champignons and honey mushrooms.

Before preparing the salad, the marinade from the mushrooms must be drained and all spices that were used during canning should be removed. Mushrooms can be pre-washed, but if they are champignons, then rinsing is not necessary. Small fungi (for example, honey mushrooms) can be left whole, large ones can be cut into several parts.

The remaining ingredients are prepared according to the recipe. It is important to remember that all products that will be used for the salad must be at the same temperature. It is strictly not recommended to mix boiled eggs or potatoes that have not yet had time to cool with cold foods. If you ignore this rule, the snack will turn sour very quickly.

Various cold sauces are used for dressing. The most popular, by far, is mayonnaise. It can be mixed with sour cream in equal quantities, in which case the calorie content and fat content will be significantly reduced.

The dish is quite easy to prepare - chop everything and mix. But a rather unusual combination of products will reveal a new side each time if you take mayonnaise with different flavors (Provençal, lemon, quail eggs, cheese, etc.) or even replace it with sour cream, tartar sauce or yogurt.

  • Boiled chicken egg – 2 pcs.
  • Sweet and sour apple – 1 pc.
  • Sprigs of dill and parsley, a feather of green onion - 7 pcs.

Preparation:

1. It is advisable to remove the pack of crab sticks from the freezer in advance and let them warm to room temperature so that it is easy and convenient to cut. Remove the cellophane packaging from them and cut into large cubes or slightly oblong slices.

You can also make diagonally cut pieces - they will look very original as part of the finished dish.

2. Place the champignons in a colander and let all the liquid drain. Then cut each mushroom in half. If the caps are large, you can turn them into quarters.

3. Dry all well-washed greens and chop finely with a sharp knife. You can remove the stems from sprigs of dill and parsley, especially if they are slightly tough. So that the sticks don’t get stuck in your teeth and crunch when chewing.

  • Tomatoes - 3 pcs.

Preparation:

Boil eggs, carrots and chicken fillet. Cut them into cubes of the same size.

If possible, cut the champignons and tomatoes in the same way. The onion needs to be chopped as finely as fashionable. Mix all products in a salad bowl and season.

Light salad with mushrooms, cheese, chicken and small tomatoes

Salad with smoked chicken, mushrooms and cheese is a pretty hearty dish. But what happens if you add fresh tomatoes to it? And it will turn out to be an incredibly tasty light salad.

The following products will be required:

  • smoked chicken meat – 400 g;
  • any canned mushrooms – 50 g;
  • hard cheese – 200 g;
  • ripe, firm tomatoes – 5 pcs;
  • onion head;
  • 3 cloves of garlic;
  • salt, lemon juice and mayonnaise (all these ingredients are added to taste).

Onions should be finely chopped and fried with mushrooms. Chicken meat should be cubed into small cubes, and eggs and hard cheese should be grated. Prepare a sauce from mayonnaise, garlic and lemon juice.

Place on a plate in layers, spreading each layer with sauce and pressing down a little with a spoon. Sequence:

  • smoked meat;
  • mushrooms;
  • eggs;
  • cheese.

Decorate the very last layer with chopped tomatoes.

Salad with pickled champignons and eggplants

An amazing salad that is great served warm. Vegetable, with oil dressing, even those who watch their figure will like it.

Ingredients:

  • Salted champignons - 300 g
  • Fresh eggplants - 3 pcs.
  • Bell pepper - 1 pc.
  • Oil, salt, garlic - to taste

Preparation:

The eggplants need to be fried first. To do this, cut them into cubes, place them in a frying pan heated with oil and add the diced pepper.

When they are cooked, remove from the pan onto a paper towel to absorb the oil. Add champignons, squeeze out garlic and season.

To prevent the eggplants from becoming bitter, they need to be sprinkled with salt and left to drain into a colander. After 30 minutes, rinse, dry and fry.

Salad with pickled champignons and celery

The salad is unusual by adding celery to it. So far this product has not firmly established itself in the menu of our country, but is gaining increasing popularity due to its beneficial properties and interesting taste.

Ingredients:

  • Canned champignons – 300 g
  • Boiled chicken fillet – 300 g
  • Peeled celery root - 300 g
  • Mayonnaise and sour cream - equal parts

Preparation:

Grate the peeled celery root and place in a bowl. Cut the chicken and mushrooms into strips. Mix all products, add salt if necessary.

In addition, it is very simple to prepare - there is no need to follow the order of layers or any unusual products. All ingredients combine perfectly: chicken and eggs provide nutritional value, and peas and honey mushrooms provide juiciness and piquancy. You can also add one onion. To remove the bitterness of onions, you can pour hot water over chopped onions for a couple of minutes. Cooking time: 50 minutes. Number of servings: 6.

Ingredients:

  • Three potatoes.
  • Marinated honey mushrooms – 200 g.
  • Two boiled eggs.
  • Canned peas - 1 can.
  • Mayonnaise sauce – 100 g.
  • Greenery - for decoration.

Preparation:

1. Smoked chicken should be cut into even cubes and poured into a bowl. It is important to cut all the ingredients the same size, so the salad will be even neater and more appetizing.

2. Add chopped chicken eggs and potatoes to the bowl. Of course, these ingredients must be pre-boiled.

3. Honey mushrooms can be either store-bought or pickled at home. First, they need to be placed in a colander to drain off excess brine and only then added to the salad.

4. Choose green peas carefully, because often this product is prepared from frozen raw materials, which cannot but affect the quality. To season, use mayonnaise or thick yogurt

5. The salad needs to be mixed and left to soak, preferably in the refrigerator. You can decorate with greens and honey mushrooms.
