Buckwheat porridge pie with porcini mushrooms

Dissolve the yeast in half a glass of warm water.

Knead the yeast lean dough, cover with a linen napkin, place in a warm place for fermentation, knead twice. Divide the dough into two parts. Roll out a layer 1 cm thick, transfer with a rolling pin to a greased baking sheet, spread the dough, level it, smooth it with your hands, prick it with a fork, put the filling of buckwheat porridge with mushrooms in an even layer. Combine buckwheat porridge, mushrooms, onions, season with salt, add mushroom broth strained through four layers of gauze for juiciness and wrap the filling in the pie. The “lid” for the pie should be rolled out thinner, approximately 0.7–0.8 cm, transferred to a rolling pin, unfolded, smoothed with your hands, carefully pinched the seam, and folded down.

Prick with a fork to allow steam to escape during baking, and brush with strong tea.

It happens. that with a generous hand you put a lot of filling into the pies, but there isn’t enough for the last pies. To control the situation, you can divide the filling into 2 parts and see how the first half of the filling in combination with half of the dough is used.

If the lack of mushrooms is obvious, you should add a finely chopped boiled egg, chopped herbs (parsley, dill, basil or leeks) or fried minced meat (can be with onions) to the rest of the filling.
